Ingredients:
1.5 cups Greek yogurt (375g)
4 eggs
3 tbsp maple syrup
1/4 cup oat flour, or processed rolled oats
1 cup fresh blueberries
Instructions:
– Preheat your oven to 340°F (170°C).
– In a large mixing bowl, combine the Greek yogurt, eggs, maple syrup, and oat flour. Whisk together until smooth and well incorporated.
– Gently fold in the blueberries until evenly distributed throughout the batter.
– Pour the mixture into the prepared baking dish.
– Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is set and golden brown on the edges.
– Once baked, remove from the oven and let it cool for 5 minutes before slicing.
– Serve warm or at room temperature, and enjoy this delightful and nutritious yogurt bake!
