[GLUTEN FREE] Icebox cookies / アイスボックスクッキー

Ingredients:
1. Rice flour 50g
2. Corn starch 25g
3. Almodpoodle 25g
4. Sugar 30g
5. Soy milk 15g
6. Salt 2tsp
7. Coconut oil 40g

Gluten free recipe, again. Last I made gluten free cornflake cookie (https://youtu.be/N5ls-aeJUoU), that taste was more than I expected. Making cookies, maybe we can use rice flour instead flour, because I don’t feel any difference. Next time if I make any cake, let’s not try to use flour again, and let’s see what’s going to happen.

Icebox cookie, why “icebox” is added inside of baking food? I saw the recipe and finally I noticed. It’s because after mixing flour’s done, put it into fridge foe 30 minutes around, and let it harder and fixed before moving to process of cutting. One tip I’m telling you that after bring it back to table from fridge, you have to consider the speed. It could start melting and getting softer. Speed is very important.
