Basque Burnt Cheesecake Recipe

Basque Burnt Cheesecake from La Viña is a staple for any visit to San Sebastián in Spain. They turn out a crazy amount of these cheesecakes a day. So in light of us not being able to get there for a while, we thought we’d make some!

You will need:
1kg Philadelphia cream cheese (full fat)
6 to 8 eggs depending on size
400g caster sugar
200ml double cream
1tsp salt
20ml vanilla essence
