How to make Basque Burnt Cheesecake, simple and easy recipe using 5 ingredients.
This is a simple cheesecake and is not what you would imagine a perfect cheesecake to be.
It is dark on the top, almost ‘burnt’ and has no biscuit or sponge base. Crust free, burnt and baked in high heat that create it’s own crust. In the baking process, there is no need for a water bath to surround the tin, and I have simplified the cooking process as much as possible for people to follow along at home.
It was invented at a bar called La Viña in San Sebastian, Spain and has now become famous. It also goes by the name of La Viña cheesecake. The baked Basque Spanish cheesecake original recipe uses only 5 ingredients, but the proportions given are for making a huge for the restaurant. The volumes of the ingredients in this recipe are are suitable for making at home. The method has also been simplified so that anyone can make it at home, and is almost impossible to mess up.
Ingredients

250mls of cream
225g of cream cheese
2 eggs
2 tablespoons of plain flour
100g sugar
1/2 teaspoon vanilla extract
Bake at 200C for about 20-25 minutes. The cake should still not be set in the centre when it comes out from the oven as it will continue to cook afterwards.
