The Basque burnt cheesecake is arguably the trendiest dessert to come out of the Basque Country. It’s so easy to make and delicious that you’ll never want to make a New York style cheesecake ever again! Baked in an extremely hot oven, burnt on top, gooey in the center, and without a crust, this cheesecake is definitely my new favorite. Watch my first attempt at making it with a special introduction from Basque Country author, Marti Buckley.

Great job Anne Marie! I make my Basque cheesecake in a 6” cazuela. Great for one serving. So like many great Basque meals the ingredients should bring the flavor, the texture and the appearance. It’s the same for other famous traditional Basque dishes like Bacalao Pil Pil, Marmitako or crème caramel(koka). Im glad that you liked the basque cheesecake you made.

Ann Marie-Thanks for the video! It got me to try making Marti’s recipe that I had seen last fall. I only made half the recipe and baked them in three small spring form pans and four ramekins. They came out great and are a repeat dessert choice. For what it’s worth, I froze one to see how well it would do and didn’t notice any changes in taste or texture of the cheesecake. Again, thanks for the video and for your channel content.

I love the videos but, I have have to say BUT. If you want people to be able to use the recipes you need to give them the information they need. If they need to put the cake in a pan they need to know what size, not just "a Springform pan." If you're going to use sugar we need to know how much. So on. So forth.
