Welcome back, everyone! 👋
For a transcript see the end of this description area.

I’m excited to share not only a quick and delicious sausage, egg & cheese sandwich video but also a little update on what’s been happening in my life.
In this video, I talk about:
• The reasons behind my posting hiatus – from moving to a new state and taking a leap into a new career, to getting caught up with a new job.
• My plans for 2025: building consistency and reaching that 1,000-subscriber milestone!
• A simple, one-pan recipe using focaccia bread, Gruyère cheese, sausage patties, and a fried egg (plus how to avoid your ingredients from sticking on the pan).

Whether you’re here for the cooking tips or just curious about my journey, I hope you enjoy this mix of food, tech, and life updates. Don’t forget to subscribe if you like what you see, and share your own stories in the comments!

Welcome back everyone!
Been a minute.

Yes, it’s been a long time since I posted anything on this channel.
First of all, thank you so much to everyone who’s continued to be subscribed, it means a lot.

Let’s make a simple egg sandwich and I’ll tell you a little bit about what’s happened.

This is just something I’ve started to have in the past couple of months. It’s nothing special but it tastes good.

I like to use a focaccia bread. It’s an Italian bread made with olive oil. I pick this up from a local bakery so it’s nice and fresh.
You can’t have a sandwich without some cheese, here I’m using Gruyère.

For some added protein, I’ll be using sausage patties.

Of course you need some ketchup.

And just one egg is enough for me in the mornings.

The main reasons why I took a pause on posting new videos was because of some life changes. For starters, we moved to a new state. That took a lot of time and resources, both before and after the move. The great thing, is we had family that supported us once we made the move and I also appreciated the family that cheered us on from afar.

Once I moved here, I also decided to make a career change. It made things more challenging but it was a chance I wanted to take. That also took a lot of time a resources.
Then I got a new job and that took up more of my time than I anticipated. So, it didn’t leave me much room to make videos.

But now I want to get back into making videos. I miss it! It’s fun and I get to continue growing my skills as a cook and a YouTuber.

My first goal for 2025 is to add consistency. I would like to have a consistent upload schedule for the channel.
My second goal is to get one thousand subscribers!

I’ve always wanted to get to that number and I think I can achieve that this year.

Well I don’t want to bore you with more details about my life. This is new to me and I’m not sure how much I should share and how much you want to actually hear. So that’s enough about my life.

Now let’s talk about food and tech.

What I like most about this breakfast of course is that it tastes good but most of all is that I just use one pan.

As you can see, I didn’t add any oil to the pan. The only oil it had as a tiny drop which I then spread with a paper towel just to maintain the pans seasoning when it gets cleaned.

You’ll also see that things don’t stick to the pan.
While having a proper seasoning on the pan is important it’s also important to pre-heat the pan. As you saw, I put the burner on medium and as I’m making my coffee the pan heats up. This takes around four to five minutes.

Once the pan is warmed through then I place the ingredients.

Another cool thing I’m trying out in this video is using my phone to film this.
I finally upgraded from six year old iPhone XS Max.

I’m actually using three cameras for this video. Let me know down in the comments if you can spot which shots are taken with the iPhone.

Well this was just a warmup video I wanted to make to get things started again.

Is there something you’ve gotten back into recently? Or is there something new you are trying out this year? Let me know in the comments, I’m curious to know.

Thank you for watching and have a great day.
