Langues de Chat Cookies: Use Up Your Egg Whites 🤗🍮🥚
In my kitchen, I’m always on the lookout for clever recipes to utilize leftover ingredients. Today, I’m excited to share a delicious way to use up those egg whites that often linger after using the yolks for another dish. Langues de Chat cookies, a light and crispy treat, are a French specialty known for their simplicity and exquisite flavor. Originating from France, these delicate cookies are often enjoyed alongside coffee or tea. So, without further ado, let me unveil my clever recipe for transforming these egg whites into a delightful indulgence.
Origin of Langues de Chat: Langues de Chat, meaning “cat’s tongues” in French, refer to their elongated, thin shape resembling a cat’s tongue. These cookies are very popular in France and are commonly served with tea or coffee.
Ingredients:
– 4 egg whites
– 125 g of flour
– 125 g o fsoftened butter (at room temperature)
– 125 g of sugar
– 1 packet (7.5 g) of vanilla sugar
Preparation:
1. In a mixing bowl, add the softened butter and cream it using a spatula until smooth.
2. Add the sugar and vanilla sugar, mixing until you have a creamy consistency.
3. Sift the flour into the mixture and stir until you have a homogeneous batter.
4. Lightly beat the egg whites with a fork (for 1-2 minutes) and add them to the mixture, stirring with a spatula until you achieve a smooth and uniform dough.
5. Transfer the dough into a piping bag fitted with a round tip (about 6 mm) and let it rest in the refrigerator for about 20 minutes.
6. Preheat the oven to 190°C (374°F).
7. After resting, pipe sticks about 6-7 cm long onto a baking sheet, leaving enough space between them.
8. Bake for about 8-10 minutes. The edges of the cookies should be golden.
9. Once out of the oven, gently lift the Langues de Chat using a spatula and let them cool on a flat surface.
