These raisin oatmeal cookies are a great way to increase your fiber intake. If prepared properly, it can help you lose weight! I know it can be difficult to resist but let’s try to eat small portions of these delicious treats!!😋💛🍪

Ingredients:

* 5 tablespoons reduced fat margarine or light butter
* 1/2 cup light brown sugar
* 1 egg
* 1 teaspoon vanilla sugar
* 1 cup whole wheat flour
* 1 cup quick cooking oats
* ½ teaspoon baking soda
* ½ cup raisins
* ¼ cup chopped walnuts

🍪 Directions:
1. Preheat oven to 350 degrees F. Mix the butter, brown sugar, and egg in the bowl of a food processor or electric mixer, and process until smooth.
2. Then mix the flour, oats, vanilla sugar, and baking soda in a separate bowl. Add the flour mixture to the butter mixture and mix well. Then add the walnuts and raisins.3. Coat a baking sheet with nonstick cooking spray. Drop rounded teaspoonfuls of dough onto the baking sheet, placing them 1 ½ inches apart. Flatten each cookie slightly with the tip of a spoon.4. Bake at 350 degrees F for 10 to 15 minutes, or until lightly browned and crisp. Cool the cookies on the pan for 1 minute, then transfer the cookies to wire racks and cool completely. Serve immediately, or transfer to an airtight container.
