CHOCOLATE CHIP COOKIES: soft and fragrant!
INGREDIENTS (for 20 cookies)
2 eggs
100g (1/2 cup) of sugar
100ml (1/2 cup) of vegetable oil
2 tsp of baking powder
150g (3/4 cup) of cornstarch
100g (1/2 cup) of chocolate chips
270g (2 1/4 cups) of all-purpose flour
Zest of 1 lemon
METHOD
1. In a large bowl, add the eggs, sugar, vegetable oil, and lemon zest.
2. Mix the ingredients with a spoon until you get a smooth and jelly-like mixture.
3. Add the potato starch, baking powder, and chocolate chips, and mix until fully combined.
4. Add the flour and mix again until the dough is workable.
5. Transfer the dough to a work surface and continue kneading until you get a smooth dough ball.
6. Roll out the dough with a rolling pin, using a little flour to prevent sticking, to about 1 cm thickness.
7. Use a cookie cutter with a diameter of about 5-6 cm to cut out the cookies.
8. Place the cookies on a baking tray lined with parchment paper, slightly spaced apart.
9. Bake at 180°C (350°F) for about 15 minutes.
