Claire Saffitz’s Sweet Yeast Dough
This is Claire Saffitz’s recipe for Sweet Yeast Dough from her Dessert Person cookbook. Claire’s Sweet yeast dough can be used to make cinnamon rolls, monkey breads, sticky buns, Babka. It is a foundational recipe that can be used in almost anything that calls for a dessert dough or sweet yeast bread recipes. I made Claire Saffitz’s walnut sticky buns in a another video with this dough and in the future I will make Claire Saffitz’s Monkey bread and Claire Saffitz’s Speculoos Babka. I suspect this dough would be a great donut dough as well. I will try it and let you know! I made the dough by hand, but of course a stand mixer/ Kitchen aid would make your life easier.

Ingredients:
1 cup whole milk (8 oz / 227g)
1 1/2 teaspoons active dry yeast (0.18 oz / 5g)
4 1/2 cups all-purpose flour (20.6 oz / 585g)
1/3 cup sugar (2.3 oz / 66g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
10 tablespoons unsalted butter (5 oz / 142 g), cut into 1-inch pieces, chilled
3 large eggs (5.3 oz /150g)
