No refined sugar healthy chocolate muffins -swap banana for sugar

Easy mix fluffy delicious chocolate muffins and the best bit I’ve experimented to make them even healthier, moister and more delicious with a refined sugar free version by replacing sugar with banana.

Chocolate banana easy mix muffin recipe

2 cups whole meal(whole-wheat) self raising flour
2 tsp ground cinnamon
1/4 cup cocoa
1/2 tsp bicarbonate soda
1/4 tsp salt
3/4 cup chocolate chips
3/4 cup buttermilk
2 eggs
2 bananas (very ripe peeled and mashed)
1 tsp vanilla
1/4 cup maple syrup

Preheat oven to 160C (325 F)Mix all dry ingredients in a bowl.
In a separate bowl whisk together wet ingredients (including banana)
Combine wet and dry ingredients and mix with a spoon or spatula until just combined.
Divide evenly into a 12 hole muffin tin
Bake for 25-30 mins until a skewer comes out dry.
Allow to cool in pan for 5 mins then put on a wire rack to cool. Although they are delicious eaten still warm.

To make the sugar version replace 2 bananas and 1/4 cup maple syrup with 3/4 cup sugar.

To make an Easter version pop a cross on top by mixing together
1/4 cup icing sugar (powdered sugar)
1tsp water plus extra 1/4 tsp water
Dash of cinnamon
Mix together powdered/icing sugar with 1 tsp water and cinnamon. Add extra water as required to make a thick piping consistency and pop mixture in a ziplock bag, cut a small hole in the corner and pipe a cross on the top of each muffin.
