Easy Tacos 🌮🌮 – Enjoy the Veg Tacos in Mexican style

Easy Vegetarian Tacos
This recipe focuses on a quick and flavorful filling using readily available ingredients. Feel free to customize with your favorite vegetables and toppings!

Yields: 4-6 servings
Prep time: 15 minutes
Cook time: 15-20 minutes

Ingredients:

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper (any color), chopped
1 (15-ounce) can black beans, rinsed and drained
1 teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon smoked paprika (optional, for smoky flavor)
Salt and pepper to taste
Juice of ½ lime
1/4 cup chopped fresh cilantro
12-18 corn or flour tortillas, warmed
Optional Toppings:
Shredded lettuce or cabbage
Diced tomatoes
Avocado or guacamole
Salsa (pico de gallo, your favorite kind)
Sour cream or Greek yogurt (dairy or non-dairy)
Shredded cheese (cheddar, Monterey Jack, cotija)
Pickled red onions
Hot sauce
Instructions:

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and1 chopped bell pepper and cook for another 5-7 minutes, until the pepper is tender-crisp.  

Add Beans and Spices: Stir in the rinsed and drained black beans, chili powder, cumin, and smoked paprika (if using). Cook for 5 minutes, stirring occasionally, allowing the flavors to meld.
Season and Finish: Season the mixture with salt and pepper to taste. Squeeze in the juice of half a lime and stir in the chopped cilantro. Cook for another minute.
Warm the Tortillas: While the filling is cooking, warm your tortillas according to package directions. You can warm them in a dry skillet over medium heat for a few seconds per side, wrap them in foil and warm in the oven, or microwave them briefly.
Assemble the Tacos: Arrange the warmed tortillas on a serving platter. Spoon the vegetarian filling into the center of each tortilla.
Add Toppings: Let everyone customize their tacos with their favorite toppings.
Vegetarian Taco Filling Ideas & Variations:
Roasted Vegetables: Roast a mix of vegetables like sweet potatoes, cauliflower, zucchini, corn, and bell peppers with taco seasoning for a hearty filling.
Lentils: Cook lentils with vegetable broth and taco seasoning for a protein-rich filling. Mash some of the lentils for a creamier texture.
Sweet Potato and Black Bean: Combine roasted or mashed sweet potatoes with black beans, corn, and spices.
Mushrooms: Sauté sliced mushrooms with onions, garlic, and taco seasoning. Cremini or portobello mushrooms work well.
Tofu or Tempeh: Crumble firm or extra-firm tofu or tempeh and sauté with taco seasoning until browned and slightly crispy.
Quinoa or Rice: Add cooked quinoa or rice to the bean and vegetable mixture for extra bulk and texture.
Spicy Cauliflower: Toss cauliflower florets with olive oil and a spicy seasoning blend (chili powder, cumin, cayenne pepper) and roast until tender and slightly charred.
Corn and Zucchini: Sauté corn kernels (fresh or frozen) with diced zucchini, onions, and a touch of lime and chili powder.
Refried Beans: Use seasoned refried beans as a simple and quick filling base. Top with your favorite veggies and cheese.

  2. I made some of these and they are so yummy. I found when I left half the dough overnight in the fridge so much easier to work with the next day. I also added a bit more salt and balanced out the spicy chilli with a dollop of yoghurt yummo!!! I’ll be making them again..and Loved to Have it with Some Arjun Tea of Planet Ayurveda.
