Pumpkin Maple Muffins with Maple

Ingredients:
For the Muffins:
• 1 (15-ounce) can pumpkin purée
• 1/2 cup butter, melted
• 1/2 cup packed brown sugar
• 1/2 cup granulated sugar
• 1/3 cup Meridian maple syrup
• 2 large eggs
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 tablespoon pumpkin pie spice
• 2 teaspoons ground cinnamon
• 2 teaspoons baking powder
• 1/2 teaspoon salt
For the Streusel Topping:
• 1/2 cup all-purpose flour
• 1/3 cup oats
• 1 teaspoon ground cinnamon
• 1/3 cup packed brown sugar
• 1/4 cup butter, melted (cooled)
• 2 tablespoons Meridian maple sugar (plus more for
sprinkling)
Directions:
1. Preheat your oven to 375°F (190°C). Grease a
muffin tin or use a silicone muffin pan.
2. In a medium bowl, whisk together the dry
ingredients: flour, pumpkin pie spice, cinnamon, baking
powder, and salt. Set aside.
3. In a separate large bowl, mix the pumpkin purée,
melted butter, brown sugar, granulated sugar, Meridian
maple syrup, vanilla, and eggs until well combined.
4. Gradually add the dry ingredients to the wet
mixture, stirring until just combined. Be careful not to
overmix.
5. Scoop the batter into the prepared muffin tin, filling
each cup about 3/4 full.
6. To make the streusel topping, combine the flour,
oats, cinnamon, brown sugar, melted butter, and
Meridian maple sugar in a small bowl. Mix until the
mixture becomes crumbly.
7. Sprinkle the streusel evenly over the muffin batter,
then sprinkle a little extra maple sugar on top for an
added sweet crunch.
8. Bake in the preheated oven for approximately 25
minutes, or until a toothpick inserted into the center of
a muffin comes out clean.
9. Allow the muffins to cool in the pan for 10 minutes,
then transfer them to a wire rack to cool completely.
