Bran Loaf with Coconut, Cranberry & Almond
Moist, hearty, and just the right amount of sweet — this bran loaf is giving old-school comfort with every slice. Perfect with chai or coffee!
Ingredients
– 1 box of bran muffin mix
– 2 cups boiling water
– 1/4 cup oil
– 2 egg
– 1/2 cup sweetened shredded coconut
– 1/2 cup dried cranberries
– 1/3 cup chopped almonds (toasted if you like)
– Optional: 1/2 tsp cinnamon
Instructions:
1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
2. Prepare the muffin mix as directed on the box (combine wet and dry ingredients).
3. Gently fold in the coconut flakes, cranberries, and almonds.
4. Pour into the prepared loaf pan and smooth the top. And sprinkle some more dry fruits.
5. Bake for 45–55 minutes at 350°F or until a toothpick inserted in the center comes out clean.
6. Let it cool in the pan for 10 mins, then transfer to a wire rack.
