【材料】8個分
・強力粉:200g
・全粒粉:50g
・黒糖:38g
・塩:3g
・スキムミルク:12g
・ドライイースト:3g
・牛乳:180g
・バター:25g
・牛乳(ツヤ出し用):適宜
【作り方】
1、ボウルの中に強力粉・全粒粉・黒糖・塩・スキムミルク・ドライイーストを入れ軽く混ぜる
2、牛乳とバターを加え生地がまとまるまでヘラで混ぜる
3、生地がまとまったら台の上に出し生地が滑らかになるまで捏ねる
4、生地に弾力が出て滑らかになったら2倍程度に膨らむまで一次発酵させる
5、発酵が完了したらガス抜きをして生地を8等分する
6、生地を丸め直し10分ベンチタイムをとる
7、ベンチタイム完了後生地をきれいに丸め直し天板に並べる
8、40分程度二次発酵させる
9、表面に牛乳を塗り180℃に予熱したオーブンで12〜15分焼く

・Strong flour: 200g
・Whole grain flour: 50g
・Brown sugar: 38g
・Salt: 3g
・Skim milk: 12g
・Dry yeast: 3g
・Milk: 180g
・Butter: 25g
・Milk (for gloss): as appropriate
[How to make]
1. Place strong flour, whole wheat flour, brown sugar, salt, skim milk, and dry yeast in a bowl and mix gently.
2. Add milk and butter and mix with a spatula until the dough comes together.
3. Once the dough comes together, put it on the counter and knead until the dough is smooth.
4. Once the dough becomes elastic and smooth, let it rise for the first time until it doubles in size.
5. Once fermentation is complete, remove the gas and divide the dough into 8 equal parts.
6. Re-roll the dough and take 10 minutes of bench time.
7. After the bench time is complete, round the dough neatly and place it on the baking sheet.
8. Let the secondary fermentation take place for about 40 minutes.
9. Brush the surface with milk and bake in a preheated oven at 180℃ for 12 to 15 minutes.
