_Dough Ingredients:_

Sugar 100 g
Butter 70 g
Honey 100 g
Egg 1 pc
Flour 300 g
Cocoa powder 10 g
Ground cinnamon 1 tsp
Ground ginger ½ tsp
Baking soda ½ tsp
Baking powder ½ tsp
Vanilla extract ½ tsp
A pinch of salt

_Icing ingredients:_

Egg white 1 pc
Powdered sugar 170 g

👉 _This recipe yields approximately 40 gingerbread cookies._

🔷 *Step 1.*

In a large bowl, sift 300 g of flour, 1 teaspoon of ground cinnamon, ½ teaspoon of ground ginger, ½ teaspoon of baking powder, ½ teaspoon of baking soda, and 10 g of cocoa powder. Add a pinch of salt and mix well. Set aside.

🔷 *Step 2.*

In a saucepan, combine 100 g of sugar, 70 g of butter, and 100 g of honey. Bring the mixture to a boil, then let it cool. Once cooled, whisk in 1 egg and ½ teaspoon of vanilla extract. Stir thoroughly and then gradually incorporate the flour and spice mixture. The dough will be soft and sticky. Wrap it in cling film and refrigerate for at least 2 hours. The dough can also be stored in the refrigerator for up to two days.

👉 _If it sticks too much, feel free to sprinkle it with flour. But be careful-too much extra flour can make the gingerbread tough._

🔷 *Step 3.*

Divide the dough into two parts and roll each portion on a sheet of parchment paper to about 1/8 inch (4-5 mm) thick. Cut out snowflake shapes, leaving a small distance between them. Remove the excess dough between the gingerbread. Form a ball from the remaining dough, roll it out again, and cut out more gingerbread. Bake It in the preheated oven for 5-7 minutes at 360°F (180°C). Let them cool on a wire rack.

👉 _If the cookies seem dry after coming out of the oven, don’t worry-they will soften the next day._

🔷 *Step 4.*

When the gingerbread has cooled, prepare the icing for decorating. Mix one egg white (about 30 g) with 170 g of powdered sugar. Stir until smooth, then beat with a mixer until the mixture thickens, becomes fluffy, and forms stiff peaks. Transfer the icing into a pastry bag and cut off the tip to create a small hole.

👉 _The thickness of the decorating icing can be adjusted by the amount of powdered sugar: more sugar makes the icing denser, less sugar makes it more liquid._

Decorate your gingerbread with a snowflake design or any design you wish and let them dry completely.
