Temper Chocolate Pistachios Quinoa Bars

INGREDIENTS:
1 ¼ cups of pistachios
½ cup of uncooked white quinoa
1 cup of pitted dates
2 tbsp of agave syrup
¾ tsp of salt
¼ cup of dark chocolate chips
2 tbsp of water
½ cup of green candy melts
White fondant
Black fondant

INSTRUCTIONS:
1. Preheat the oven to 350ºF.
2. Crush the pistachios. Rinse and drain the quinoa. Spread the quinoa and pistachios in an even layer on a large baking sheet. Bake for 10 minutes, stirring occasionally until lightly brown and toasted. Remove from the oven.
3. Reduce the temperature to 200ºF. Line an 8×8 inch pan with parchment paper, leaving a 1-inch overhang on all sides. Set aside.
4. In a food processor, process the dates, syrup, salt, and 2 Tbs of water until smooth.
5. Combine the date puree, quinoa, and pistachios in a medium mixing bowl. Stir in the chocolate chips.
6. Press the mixture firmly into the bottom of the prepared pan. Bake for 25 minutes or until no longer sticky. Cool completely and cut a circle shape.
7. Melt the candy melts at half power for 1 minute. Stir thoroughly and continue to microwave and stir at 30 seconds intervals until melted.
Add ¼ of chopped pistachios and mix.
8. Spread the chocolate mixture on wax paper and let cool completely. Cut into one big half moon shape and four small triangle shapes.
9. Use the chocolate shapes for the mask, the white fondant for eyes and fangs and black fondant for the pupils.
