Carrot Cake Overnight Oats
INGREDIENTS (2 servings)
1/2 small banana (45 grams)*
1 cup (90 grams) quick oats
1/2 tsp ( 1 gram) ground cinnamon
1/4 tsp (0,5 grams) ginger powder (optional)
1/4 tsp (0,9 grams) ground nutmeg (optional)
3 tbsp (30 grams) raisins
3 tbsp (21 grams) walnuts, chopped
1/3 cup (45 grams) carrot, shredded
3/4 cup (180 grams) milk of choice**
1/3 cup (80 grams) Skyr, Greek yogurt or quark***
INSTRUCTIONS
1. Take a medium size bowl. Put the banana into the bowl and mash it with a fork into a puree.
2. Add the quick oats, ground cinnamon, ginger powder, ground nutmeg, raisins, chopped walnuts, shredded carrot and milk to the banana puree. Stir with a spoon or fork until all ingredients are fully incorporated.
3. Divide the oats-mixture over 2 small cups or bowls, suitable for 1/2 +1/3 cup (200 grams) of fluid each. Smoothen the top with the back of a spoon.
4. Transfer the cups to the refrigerator and refrigerate overnight.
5. Take the cups out of the refrigerator and put them on 2 seperate plates. Take the Skyr or Greek yogurt or quark, divide it in half and scoop it on top of the oats.

NOTES
* You can substitute the banana for 2 tbsp (20 grams) of honey if you prefere
** I used semi-skimmed milk. You can substitute this for a plant-based milk like soy- or almond milk if you want to make this a vegan recipe.
*** I used Skyr here. You can substitute this for a plant-based yogurt like soy- or almond yogurt if you want to make this a vegan recipe.
