Fancy Grilled Cheese:

2 slices Sourdough Bread
1 jar basil pesto
sliced fresh mozzarella cheese
bacon
sliced tomato
butter

While your griddle pan heats up assemble your sandwich by spreading some basil pesto to 1 side of each piece of bread. Add your cheese, tomato and bacon. top with other slice of bread. spread some butter on the outside of that top piece of bread. Spray some non stick spray on the griddle pan and carefully put butter side of sandwich down first.
cook about 3 mins or til golden as Sourdough tends to toast up longer.
while that cooks spread butter on the top bread. Flip! Cook 3 more mins.
