Crispy Spicy Avocado Toast with Egg & Maple Chili Drizzle

Start your morning with this flavour-packed, crispy avocado toast topped with a perfectly cooked egg and drizzled with homemade chili oil and maple syrup. Trust me, once you try this spicy, crunchy combo, you’ll never go back to boring breakfasts. And the best part? It only takes minutes to make!

Ingredients
1–2 slices sourdough or your favourite bread
1 ripe avocado
1 egg (fried, poached, or soft-boiled)
1–2 tsp chili oil (homemade or store-bought)
1 tsp maple syrup
1 tsp olive oil or butter (for toasting)
Salt, chili flakes & pepper, to taste

Optional: chili flakes, sesame seeds, or fresh herbs for garnish

Instructions:
Toast the bread in a skillet with olive oil or butter until golden and crispy on both sides.

Prepare the avocado
Scoop avocado into a bowl. Mash to the desired texture.
Season with salt, chilli flakes and pepper.

Cook the egg
Fry, poach or soft-boil your egg to your liking.
For a runny yolk, fry for 2–3 minutes without flipping the egg.

Assemble

Spread the mashed avocado over the crispy toast and add a dash of sriracha for extra heat. Place the egg on top, then finish with maple syrup and a little of the infused oil left in the pan from cooking the egg for extra flavour.
