加水率90%なので生地は扱いにくいですが、うまく扱うコツも伝授!

【材料】4個分
・準強力粉:200g
・塩:4g
・ドライイースト:2g
・水:180g

【作り方】
1、ボウルに準強力粉、塩、ドライイーストを入れ軽く混ぜる
2、水を加え粉っぽさがなくなるまでよく混ぜる
3、ラップをかけて15分休ませる
4、生地を10回折りたたみ再び15分休ませる
5、再び生地を10回折りたたみ生地が2倍程度に膨らむまで一次発酵させる
6、打ち粉を使いながら生地を台の上に出す
7、手で生地を広げ三つ折りする
8、4等分にカットし優しく天板に並べる
9、20〜30分二次発酵させる
10、準強力粉(または強力粉)をふり、クープを入れる
11、230℃に予熱したオーブンで15〜18分焼く(焼く前に庫内に水を吹きかける)

・200g strong flour
・4g salt
・2g dry yeast
・180g water

【Recipe】
1. Place the semi-strong flour, salt, and dry yeast in a bowl and mix lightly.
2. Add water and mix well until the dough is no longer powdery.
3. Cover with plastic wrap and let rest for 15 minutes.
4. Fold the dough 10 times and let it rest for another 15 minutes.
5. Fold the dough again 10 times and let it rise for the first time until it has doubled in size.
6. Using flour, turn the dough out onto a work surface.
7. Spread the dough with your hands and fold it in thirds.
8. Cut into quarters and gently arrange on a baking sheet.
9. Let it rise for 20-30 minutes.
10. Sprinkle with semi-strong flour (or bread flour) and cut into slits.
11. Bake in a preheated oven at 230°C for 15-18 minutes (spray the inside of the oven with water before baking).
