Ragi Cookies: Here’s How to Make Them Easily at Home with homemade nut butter
In this video I will share an easy and
delicious hazelnut and ragi cookies recipe. This recipe is gluten free and kids friendly.
Finger millet or ragi has many health, hair and skin benefits. To know more about finger millet,
you can check out other videos on my channel. To make these cookies first I will
dry roast ½ cup of hazelnuts. In grams it is about 100 grams
of hazelnuts. Keep the heat on medium. It will take approximately
12 to 15 minutes to roast these nuts. After roasting them, transfer to a plate and
let it cool down completely. This way it will be easier to remove the skin from them.
The next ingredient is ragi flour. Here I have 1 cup sprouted ragi flour. In grams it is
approximately 140 grams of flour. Dry roast it for about 2-3 minutes on medium heat. This will
help to remove raw taste from the cookies. Now I am going to grind the roasted hazelnuts.
Here I am using my spice grinder but a regular mixer will work too. Keep on grinding
until it converts in to the nut butter. Also, you would need to scrap the jar in between. It will take about 2-3 minutes
in total to make the nut butter. Add one table spoon of unsweetened cocoa powder.
Three tablespoons of any variety of sugar. And here I am adding one table spoon of olive oil. Blend everything and transfer to a bowl. In to this add one teaspoon
baking soda, ½ teaspoon salt. Add the roasted flour, 2 tablespoons of
desiccated coconut and combine everything. If required you can add one table
spoon of coconut oil or olive oil. Now take a spoonful of mixture
and shape it in the cookie. Do not forget to preheat your oven. Bake the cookies for 15 to 20
minutes at 180 degrees Celsius. The cookies are ready now.
