Crush 200g of gingerbread cookies into fine crumbs using a food processor or crushing them with a rolling pin in a sealed plastic bag.
You can also blend whole cookies with 100g of cream cheese at once if you prefer some crunch in your truffles
If you’re using store-bought gingerbread cookies, you can blend your favorite festive spices and nuts into the mixture to zhuzh it up
I followed my gingerbread recipe so my cookies are already fairly spicy and contain walnut pieces
Take small portions of the mixture and roll them into bite-sized balls. Place them on a lined baking sheet or plate
I happen to have a silicon mold with tiny Holiday-themed figures, so I use it to shape a portion of the truffles
Place the truffles in the refrigerator for at least 30 minutes to firm up. This step makes them easier to handle and dip in chocolate later
If you’re glazing the truffles with chocolate, melt some dark chocolate using a double boiler or in short intervals in the microwave. Stir the chocolate until smooth
Using a fork or toothpick, dip each chilled truffle into the melted chocolate, ensuring it is evenly coated
Allow excess chocolate to drip off before placing the balls back on the lined baking plate or chopping board
While the chocolate coating is still soft, you can sprinkle additional festive decorations or chopped nuts on top for added visual appeal
Place the chocolate-coated truffles back in the refrigerator to allow the chocolate to set completely. This usually takes about 20 minutes
You can keep the remaining chocolate to drizzle over unglazed truffles
To be on the safe side, freeze the intricately-shaped truffles (7-10 minutes) before removing them from the silicon mold
Arrange the truffles on a festive platter and enjoy these delicious no-bake treats!
