Brown Sugar Shaken Espresso Overnight Oats

The overnight oats version tastes SO much like the drink! And you can optionally top it off with some Dalgona coffee. (Whipped coffee.) recipe below.

BROWN SUGAR ESPRESSO OVERNIGHT OATS
* 1 cup rolled oats
* 1 tbsp chia seeds
* 1/4 tsp salt
* shot of espresso 1 cup oat milk
* 1 tbsp brown sugar
* 1 tsp vanilla
* 1/2 cup vanilla greek yogurt (can sub unflavored yogurt)

Whipped coffee cream:
* 1 tbsp granulated sugar
* 1 tbsp instant coffee (MUST be instant!)
* 1 tbsp boiling water

Instructions:
Combine the overnight oats ingredients together in a bowl or jar, then cover and place in the fridge overnight or for at least 4 hours. In the morning, prepare the whipped coffee cream by whisking or using a hand blender to whip the sugar, instant coffee and boiling water together until it forms soft peaks.
