🍅 Warm Roasted Tomatoes with Burrata
✨ Ingredients (Serves 2):
* 1 ball burrata cheese
* 1½ cups cherry or grape tomatoes, halved
* 2–3 cloves garlic, thinly sliced (or garlic powder)
* 2 tbsp olive oil
* Salt & black pepper
* Optional: chili flakes, Italian seasoning
* Fresh basil (for garnish)
* Toasted bread or crostini (for serving)
🔥 Instructions:
1. Roast Tomatoes:Preheat oven to 400°F. Toss halved tomatoes with olive oil, garlic, salt, pepper, and seasonings. Roast for 15–20 minutes until blistered.
2. Warm Burrata:Place burrata (sealed) in warm water for 5 minutes while tomatoes roast.
3. Assemble:Spoon hot tomatoes onto a plate. Place burrata in the center. Drizzle with olive oil. Garnish with basil.
4. Serve:Scoop with toasted bread. Burrata will melt into the tomato juices — dreamy, gooey perfection.
🍂 Mini Cast Iron Chicken Pot Pies with Biscuit Topping (Serves 2)
🥘 Ingredients
Filling
* 2 Tbsp Country Crock Original (for sautéing)
* ½ medium yellow onion, diced
* 1 medium carrot, diced
* ¼ cup frozen peas (or corn/green beans)
* 1 cup raw chicken, diced
* 3 Tbsp all-purpose flour
* 1 cup chicken broth
* ½ cup milk or cream
* ½ tsp dried thyme (or poultry seasoning)
* Salt & pepper, to taste
Biscuit Topping
* 1 ¼ cups all-purpose flour
* ½ tsp sugar
* 1 ½ tsp baking powder
* ½ tsp salt
* 3 Tbsp Country Crock Original (cold, not melted)
* ½ cup milk (or buttermilk)
🧑🍳 Directions
1. Cook the Filling
* Melt 2 Tbsp Country Crock in a skillet. Add onion & carrot; cook ~5 minutes.
* Stir in flour, cook 1 minute.
* Slowly whisk in chicken broth and milk; stir until thick and creamy.
* Add diced chicken, peas, thyme, salt, & pepper. Simmer 10–15 minutes, stirring occasionally, until chicken is fully cooked.
* Adjust consistency with more broth/milk if needed.
* Lightly butter mini cast iron skillets, then divide filling evenly.
2. Make the Biscuit Topping
* In a bowl, mix flour, sugar, baking powder, and salt.
* Cut in Country Crock until crumbly.
* Stir in milk until soft dough forms (don’t overmix).
3. Assemble & Bake
* Drop spoonfuls of dough over filling (it will spread as it bakes).
* Optional: Brush tops with milk for golden color.
* Place skillets on a baking sheet.
* Bake at 400°F for 20–25 minutes, until biscuit tops are golden and cooked through.
* Let cool 5–10 minutes before serving.
🦃 Ground Turkey Chili for Two (Bread Bowl Cozy Dinner)
🍽️ Serves: 2 generous bowls🔥 Difficulty: Easy
🛒 Ingredients:
* ½ lb ground turkey (93% lean)
* ½ yellow onion, diced
* 2 garlic cloves, minced
* 1 tbsp olive oil or butter
* ½ can crushed tomatoes (~7 oz)
* ½ can tomato sauce (~4 oz)
* ½ can black beans (or 1 small 7.75 oz can), drained
* ⅓ cup broth or water
* 1 tsp chili powder
* ½ tsp cumin
* ½ tsp smoked paprika
* ¼ tsp oregano
* ½ tsp salt + ¼ tsp black pepper
* Pinch of brown sugar (optional)
To Serve:
* 2 sourdough bread bowls
* Sliced sharp cheddar (shredded or torn)
* Optional: sour cream, avocado, green onions
👩🏾🍳 Directions:
1. In a pot, heat oil over medium. Sauté onion for 3–4 min, then add garlic for 30 sec.
2. Add ground turkey, season with salt + pepper, and cook until browned.
3. Stir in tomatoes, sauce, beans, broth, and all spices.
4. Simmer on low, uncovered, for 20–25 minutes.
5. While chili simmers, toast bread bowls at 350°F for 8–10 min.
6. Fill bowls with chili, top with cheddar, and let melt.
7. Add your toppings and enjoy warm with the bread lid on the side!
🥪 Pressed Roast Beef & Cheese Sandwich on Ciabatta
🍞 Bread: Ciabatta roll, sliced and lightly toasted🥩 Meat: 4–5 slices of roast beef (deli-style or homemade)🧅 Veggie: Sautéed yellow onions (or red if preferred)🧀 Cheese: White cheddar, Havarti, or Swiss🧂 Sauce (optional): Dijon mustard, balsamic glaze, or none if preferred🌿 Add-ons (optional): Baby arugula or spinach
🔥 Instructions:
1. Lightly toast your ciabatta bread for structure.
2. Sauté onions in a pan with olive oil until soft and golden.
3. On the bottom half, layer in this order: cheese → roast beef → sautéed onions.
4. Add optional greens and a drizzle of Dijon mustard or balsamic glaze if desired.
5. Top with another slice of cheese (if you want it extra melty).
6. Close the sandwich and press or grill for 3–5 minutes until warm and gooey.
7. Slice and enjoy immediately!
