Heat. Heat. [Music] [Music] Today I’m going to show you my version of the Greek Euro chicken. We’re going to make I’m also going to show you how to make your own pitha bread and how to make your own tusiki sauce. Let’s get started. Okay, we will make the quick chicken euro. We have here boneless chicken thighs or you can use chicken breast if you like. We’ll marinate this in lemon juice, salt. I’m using 2 tespoons of salt. Then you have uh oregano powder, black pepper or you can use white. And last we have olive oil. When you marinate, always add the oil last because if you add the oil too early or if you add the oil first, it will coat the chicken that when you add the salt and other seasoning, it won’t be able to absorb the seasoning. So, add the oil last. I’m using olive oil. Of course, you can use regular cooking oil. We’ll marinate this for at least 30 minutes. Of course, overnight is best, but 30 minutes is fine. Okay, let’s make pa bread. I have it water, yeast, uh, a little sugar. So, we have food for the yeast. And then we have flour, we have salt, and last we have oil. Very easy to make pa bread. So, uh, we will mix this first. uh for 2 minutes to allow the liquid to pick up the flour so that it will form a dough. After that we mix it for 6 minutes. It has already formed the dough. So it means you have enough liquid. So we will mix this for 6 minutes. All right. You have our dough. See? Okay. We will let this rest for about 30 minutes on a grease bowl. All right. Okay. Rest 30 minutes. All right. Over here, we’re going to grill the chicken. This is boneless. Heat. Heat. [Music] [Music] All right, let’s make the siki sauce. I have here Greek yogurt. If you cannot find Greek yogurt, regular yogurt is fine. And then you have minced garlic. You have grated cucumber. Remove the seeds and the peel. And then you have lemon juice. And then you have a little salt, a little pepper. All right. And this is your sashiki sauce. A pita dough is ready. Let’s divide this in eight portions, but I want to weigh it because I want it to be the same size. Right. This is about uh 70 g each. If you want to make more pa bread, just double the recipe, form them into balls, [Applause] and then we’re going to cook this in a hot pan. So, we make eight pieces. We dust this with a little flour. [Applause] When you roll, you have to dust it with flour because if there is no flour, you won’t be able to roll it. It’s going to stick to the uh board or to the table to get a circle or around after you roll quarter turn. It doesn’t have to be a perfect circle because uh you know you cannot control how the dough will uh rise when you cook this. So you make about this is about um 7 to 8 in. You can also make the pizza bread in the oven. Whatever you have. You can use a pizza oven, you can use a regular oven, or you can just cook it in the griddle. For me, the griddle is the easiest because everyone has a griddle. See, you can see now it’s forming a pocket. Okay. And then you flip and you continue to cook. All right. Okay. We’ll do the next one. When you see the dough bubbling up, it’s creating a a space or a hole or a cavity inside. So you can put your filling. Okay, we’re almost done. This is our last tuman. Uh this is 8 inches and then we will assemble shortly. All right. Here this is our chicken. I’m just cutting them into strips or just into smaller pieces. All right. See, you can see a a pocket here. Okay. So, this is where you put your stuffing. We have our [Applause] chicken. Then we have onions. We have tomatoes. Then we have the yogurt sauce and then more chicken, onions, tomatoes, and then you garnish this with right some parsley. So this is how you present it. I’ll make another one here. Chicken. Onions.
