đRecipe for Oats Banana Pancakes
1. Dry roast oats:
Heat a small pan on low flame. Add 3 tbsp oats and dry roast for 2â3 minutes until slightly aromatic. Donât let them brown too much – just to remove the raw smell.
2. Grind oats into flour: Let the roasted oats cool slightly. Grind in a blender to fine powder.
3. Prepare the batter: Mash œ banana in a bowl. Add oats flour, œ tsp dry fruit powder, ÂŒ tsp seed powder, and 2â3 tbsp water. Mix well and adjust water to get a thick but pourable batter (like dosa batter).
4. Cook the pancakes: Heat a non-stick pan on low flame. Brush with a little ghee. Pour a small spoon of batter and spread gently into a mini pancake. Cover with a lid and cook for 2â3 minutes until the bottom sets. Flip carefully and cover again; cook for 1â2 minutes until soft and fully cooked.
5. Serve: Let it cool slightly. Cut into bite-size pieces for your baby. Optionally, brush with a drop of ghee on top.
