Itadakimasu Recipe #53 Today, I’m making a sweet potato dessert. It’s a very popular treat here in Japan. It has a gentle aroma of rum, a dessert for adults. How to make sweet potato treats. From Ibaraki Prefecture, Beni Haruka sweet potatoes. They are very sweet. Japanese sweet potatoes are exceptional. I line them up on a baking sheet, and bake them in the oven as they are. Into the oven they go. For this size, 180°C for 45 minutes. While they bake, let’s get the tools ready. A spatula, and a masher are useful. I might need this too. Rum and maple syrup. Eggs and sugar. Salt, heavy cream, and melted butter. The sweet potatoes are baked! Gloves are a must—they’re hot. Smells like baked sweet potatoes. They’re piping hot. I take them off the baking sheet, one by one. I could just spread some butter and eat them like this. While still hot, cut them in half, and scoop out the inside. Don’t throw away the skins—they’ll be used later. Scoop carefully so they don’t tear. Like this. They’re creamy and smooth. Looks so sweet. I love sweet potato dishes. For example, sweet potato rice, sweet potato tempura, sweet potato potato salad, sweet potato gratin, and, of course, sweet potato desserts. Japanese sweet potatoes are very sweet, so if you cut them small and add them to dishes, they’re like little raisins, a small sweet surprise. You’ll always look for that sweetness in every bite. Sweet potato skins! 1 kg of peeled sweet potatoes. Mash them with a masher. I deliberately avoid using a food processor. Beet sugar, 60 g. It’s okay if there are a few lumps left. Add the egg yolks. Two at a time. Mix once, then add the next two. They got sucked into the hole. Haha. Once smooth, add the heavy cream. Heavy cream, 60 ml. It’s been exactly one year since I started making videos. I was obsessed with filming my handwritten recipe notes. Haha. Mix in the heavy cream. Salt, 1/2 teaspoon. Melted butter, 60 ml. I’m using unsalted butter. Mix well, then add rum, 1–2 tablespoons. I like a little extra—2 tablespoons. Haha. Such a nice aroma. I don’t usually drink rum, but I love using it in desserts. Switch to a spatula and knead. It’s okay if there are a few lumps. Shape the sweet potatoes. Fill them into the skins. Like this. Plenty of filling. This part is always fun. Line a baking sheet, and shape them again. Keep filling the skins. If you eat it like this, you might get tipsy. Haha. But it’s delicious like this, so I can’t resist taking a bite. Last one. One egg yolk. 1 tablespoon maple syrup. Mix and coat them. They shine and the coating prevents drying. Bake in the oven. 180°C for about 20 minutes. It’s getting dark. Clear the remaining skins, and they’re baked! Such a sweet aroma! They’re done. I could have browned them a bit more. They’re moist and tender. I take one fresh… place it on a plate, and enjoy. A grown-up sweet potato with a hint of rum.
