Hey hey! Hi everyone! It’s finally October 💦 And October means… Halloween! As a sweets-making nerd, Halloween and Christmas are huge events for me. About a month before, I start prepping and making all kinds of treats—that’s my idea of fun! 🥳 So today, I’m making Halloween-themed sweets! I was thinking of making some spooky stuff, like ghosts or Jack or Frankenstein— but I’m skipping the characters this time. Instead, I’m going for stylish pumpkin-themed treats. Let’s get started! (Today’s mission: soak up autumn!) I’ve split the dough into three parts—time to color them! So what am I making right now? Pumpkin cookies! Just like this— Mixing pumpkin powder and cocoa powder. Two of the three colors are just pumpkin powder, so they’ll taste like pumpkin. The third one has cocoa too, so it’s got a hint of chocolate. Ta-da! Three colors done! Now I’m adding flour to each. I bake all the time, even when there’s no occasion, but lately with fall sweets and Halloween, my baking motivation is through the roof! I can’t wait to make Halloween character treats too! I’ve got so many ideas swirling around. Alright, done! Ta-da! Three doughs ready to go— I’ll chill them in the fridge for about an hour and a half. Next up: macarons! Yep, again today! I’m thinking pumpkin-shaped ones this time. But the more complex the shape, the higher the chance of failure… I’ve got the basic shape down now, but even a slight change and—boom—fail city. Just a little tweak and it all goes wrong! Still messing up a lot when I try new shapes. But that’s what makes macarons so fun and addictive ( ̄▽ ̄;) I want to master every shape, so I’ll keep practicing and baking tons! Coloring is all about intuition here. I’ve added three colors for now— but the final shades? That’s a surprise after mixing! lol Let’s see what happens— It’s always fun to mix and find out! First one’s classic pumpkin orange. The other two are light brownish tones. I thought about doing white too, but… I just kinda skipped it 💦 Maybe I’ll add a bit more green… (Adjusting colors as needed) Looking good! Now let’s pipe the pumpkin shapes— This part is super tricky! I made shell-shaped ones before, and this feels just as hard 💦 Finished piping the orange pumpkins… Did I overmix the batter? The lines disappeared… Now they don’t look like pumpkins at all 😭 Hmm what should I do… Might need to draw the lines on later. You wouldn’t guess these are pumpkins, right? I’ll try to fix it with decorations later. Can I save them… (;_;) Even after the first batch, things are already looking iffy… Hope it turns out okay… (This wasn’t supposed to happen…) (Not giving up—keep piping!) Finished piping the last two batches safely— All done with the piping! But yeah, the lines on these are super faint too… I went with darker shades for the colors. Not sure if these will turn out cute… Kinda hard to tell right now. Anyway, I’m gonna let these dry for a bit. Next up, I’m making the sponge cake! I often get asked, “What’s your favorite sweet to make?” And honestly, I think it’s always been cake. Probably always will be! I just get endless ideas for cake designs. And when it comes to eating, shortcake is hands down my absolute favorite sweet. No contest! Oops, the bowl’s way too small ( ̄▽ ̄;) Oh well, it’s fine! For this sponge, I added a bit of pumpkin powder to give it a nice pumpkin flavor. Alrighty! Time to bake this! Lastly, I’m thinking of making pudding, so while the sponge is baking, I’ll start on the caramel. It’s turning brown now— ~ Yes! Got that perfect caramel color! OK! Alright then… (Gotta add water fast!) Oh no oh no oh no! I accidentally put the dish in! Totally panicked ( ̄▽ ̄;) Whew, that was stressful lol Now I’m pouring the caramel into the pudding cups. Wait, I think it’s been ages since I made pudding… Like, maybe two years? It’s been so long, I’m kinda nervous… Hmm, not enough… I don’t have enough caramel. And I don’t really need to make eight anyway, so I’ll just do six. That should be fine! Alright, I’ll chill these for now. It’s done baking! 🥳 The sponge cake came out great! I’m peeling it off the baking sheet right away. With the pumpkin powder added, the sponge looks more vibrant than usual! Why is the bottom so browned though? It’s like… only the bottom got super baked. What happened? Oh well! I’ll let it cool for now. Next up, time to make the pudding mixture! These are leftover egg yolks from the macarons. I’m using them for this. So when you make a ton of macarons, just make pudding too! Eggs are all in! Wow, this uses a lot of eggs ( ̄▽ ̄;) I want the pudding to hold its shape when I take it out of the cup, so I’m aiming for that classic café-style pudding. That’s why I’m using more milk than cream. Now I’m adding the warmed milk, but slowly so the eggs don’t cook. Just a little at a time, mixing carefully. Once it’s ready, I strain the pudding mix. I usually strain it twice. (And here comes another big mistake…) (Huh?) (Why are there so many bubbles??) (She’s totally serious about this) There are way too many bubbles, so I’m manually scooping them out 💦 I got most of the bubbles out, but there’s still a few left… Anyway, I’m baking it as is! Hmm… Why did this happen? I forgot to cover it with foil 💦 I totally should’ve covered it before adding hot water 😂 Oops… messed up again 💦 Is this gonna be okay? Will it even turn out? I’m honestly just super anxious… Alright, into the oven it goes! Carefully so the water doesn’t spill… Ta-da! Now let’s move on to the cookies! Okay, listen… About the pudding… Whenever I mess something up, I always look up what went wrong right after. Same with macarons too. And turns out… I didn’t cool it in ice water—probably the reason lol So dumb (crying) It’s been so long since I made pudding… I’m like, what am I even doing? lol Seriously, unbelievable 😂 Not cooling it in ice water definitely affects the smoothness… I seriously need to be careful next time. Anyway, I’m just gonna roll with it today. Now that the reflection session’s over— Let’s get back to the pumpkin cookies! Small things are just so cute, so I’m making them bite-sized. This might take a while… Gloves leave creases, so I’m shaping them nicely with bare hands. Once it’s rolled up— Whoa, look! It’s like a mud ball! Once it’s rolled up— Gently press the top and bottom. Just like this— It looks like a little mud ball, so cute! I think the pudding’s gonna finish baking while I’m doing this… Ta-da! Okay first of all, the colors are all over the place— And the order I’m doing things is totally random. You can really see my personality here 😂 Honestly, I’m super messy. Some of you probably already noticed 💦 Anyway, they’re all shaped now— Time to add the pumpkin details! Wait, hold on— Just as I was about to decorate the cookies, the pudding finished baking! Gonna take it out now. Heave-ho! First, removing the foil… Ouch ouch ouch 💦 How is it? How is it? It’s pretty firm… is that okay? Maybe I should take it out quickly. But actually… The surface looks nicer than I expected! I’m curious about the texture though… I’ll let these cool down for now. Then I’ll chill them in the fridge. I’m really nervous about unmolding them… Next up, the macarons have finished drying, so I’m gonna bake them one by one. While the macarons are baking, I’ll finish shaping the cookies. The pudding interrupted earlier, so I had to chill the dough for a bit. Now let’s add the pumpkin patterns! Like this, maybe? Ugh, it looks so bad… Maybe I should do it on the back side? I just can’t get it right… Using this skewer… How about like this? Just like this— Like that! How’s that? Something like this? Then press the top and bottom a little… There we go! It’s the first one, so it’s kinda messy… But I think it’s getting close to the ideal shape! Press here… What do you think? Looks more like a pumpkin than before, right? Ta-da! While I was doing cookies, the macarons finished baking! Umm… this batch was a total fail 😭 They cracked… haven’t had cracks in a while… And the feet didn’t rise at all… Super flat… I think the piping was tricky, so the batter flattened out. Anyway, I’ll let these cool for now. Just for now— Okay then! Alright, back to work! I’ve gotten way faster now— I’ve totally got the hang of it! Do this, and the top is done ✨ Now flip it over— And finish shaping the bottom half. Finally, press here and… done! ✨ Wait, this is the last one! And five minutes left on the macarons! Nice, I think I’ll make it in time! At first I thought I’d be working till sunset, but I kept getting faster— and I finished way earlier than expected 🥳 All done! ❤️ Looking good! I added some pumpkin seeds too! What do you think? Alright! Ta-da! So cuuuute! Wait, seriously—this is adorable! What is this cuteness!? Way cuter than I imagined ♡ Ta-da! Second batch of macarons is done! No cracks this time, but… Still barely any feet. They’re way shorter than usual. Probably because— The batter was way thinner than usual. But hey, at least no cracks this time! I’ll let these cool too. Next up, time to bake these little guys! The ones without pumpkin seeds— I’m gonna try dipping them in granulated sugar before baking. Like this— I’m getting nervous now, so I’ll just try a few with sugar and see how it goes. You never know until you try, right? There we go! Ta-da! Time to bake these! So cuteee! (Too cute to keep working lol) The colors are just perfect—exactly what I wanted! Totally my style. Anyway, time to bake them! No time to keep gushing! Ta-da! Just like this— All the pumpkin macarons are baked! Honestly, you wouldn’t even know they’re pumpkins… This might be a total fail 😭 The feet barely came out… And some of them cracked here and there… When things go wrong like this, you can’t always tell what caused it— That’s what makes macarons so tricky. Also, they’re super thin this time, so no wonder the feet didn’t rise. I should’ve piped them thicker… I really want to make something that people look at and say, “Oh wow, that’s a pumpkin!” That’s the kind of sweet I want to create. The bottoms look nice though ♩ I’ve peeled off the macarons and cut the sponge! And the first batch of cookies just finished baking 🥳 Look at themmm! Wait, aren’t they too cute? Is it even possible to succeed this much? They’re just ridiculously adorable (*´꒳`*) Honestly, I could end the day right here—so satisfying! I’m totally happy. So cute ❤️ But there’s still more to do, so let’s prep the second batch of cookies. Preheating the oven again! Heave-ho! Alright, time to bake the second batch of cookies! While those are baking, I’ll start frosting the cake. Let’s get the cream ready! Today’s cake will be caramel-flavored, so I’m making caramel sauce again lol While making the sauce, I was looking at the pumpkin cookie photos… They’re SO cute! I keep staring at them lol I should really focus though… I don’t want it too bitter, so I think this color is just right. Once it looks good, turn off the heat and mix in the cream. Now I’m adding it to the whipped cream and mixing it in. I always adjust the caramel-to-cream ratio to my taste. I’ve got a pretty high sweet tolerance, so I don’t need it super bitter— just enough to get that caramel flavor. But if you’re not into sweet stuff, you might want to add more caramel to balance the cake better. Alright, time to start frosting! The cookies are done baking! Second batch of cookies is ready! Looking good (*´꒳`*) I had the pumpkin cookies cooling behind the cake stand, and the camera kept focusing on them instead lol Guess even the camera wants to show them off! (Focus finally came back!) So, I’m planning a Halloween party with my cousins! We’re gonna eat sweets, chat, and play board games and stuff! I’m seriously so excited! I’ve been brainstorming tons of cute Halloween character treats! Can’t wait! The cake turned out super trapezoid-shaped… oh well! The messiest part is… probably here? Heave-ho! Yeah, the cake turned out super trapezoid-shaped… Why though? Anyway, frosting is done! (*´꒳`*) (Time to decorate!) I think a smaller piping tip would’ve worked better… Hmm, would it look weird if I added this? I kinda wanna put it on top… Wait, maybe not… it looks off 💦 I was gonna place a cookie here, but it’s way bigger than I expected… It just doesn’t look right, so I’m skipping it. I worked hard on the frosting, so it’s a shame… But if it’s gonna mess up the look— I’d rather go all in and make it messy on purpose! I usually don’t plan the design too much— I just think, “Wouldn’t it be cute to add a cookie?” That’s about it lol So I’ll keep piping cream while figuring out the design! Ugh, I’m torn… I struggled with the design a lot, but I decided to draw tiny pumpkins on the sides of the cake. Okay, pumpkins are done— Next up… Ouch ouch ouch 💦 Now I’m using this brown cream to draw the pumpkin stems. How’s this look? It actually looks like a pumpkin now! This one looked like a ribbon before… but with the stem, it totally became a pumpkin! What do you think? Isn’t it cute? Phew (missed one) (Of course I didn’t miss it!) The top of the cake looked a bit empty, so I added some decorations— Sorry, they turned out kinda messy… This brown ribbon— I think the color matches perfectly, so I’m cutting it smaller and adding it to the cake. Isn’t it super cute? This color palette? It totally screams autumn! What do you call this? Warm tones? I love it! Anyway, the cake is officially done! 🥳 Now I’m making pumpkin cream! Just mix softened pumpkin, sugar, and cream with a blender— Super easy, right? And just like that— Pumpkin cream is ready! (*´꒳`*) I’m filling the bottom half with pumpkin cream. Just like this—halfway in. Then the top half gets whipped cream. I’m using a bit of leftover caramel cream from the cake for this part. Not sure if it’ll work though… But I’m gonna try piping it anyway! Alright then— Time to unmold the pudding! I’m super nervous… Okay, here goes… Running a knife along the edge… Okay! Now lift it up… How is it? Did the pudding come out okay? This is the pudding I forgot to chill in ice water… Give it a spin or two— and it plops right out! Now I’m piping the cream I made earlier. But uh-oh, we’ve got another problem… I forgot to strain the pumpkin cream! I thought the piping tip was big enough to skip straining… But it totally got clogged. Shouldn’t have taken shortcuts… Yep, it’s clogged 💦 Wait… oh no… Nope, this isn’t working 😂 Let’s redo it. I’m remaking the cream from scratch. First, I scraped off the messed-up top layer. I feel so bad about this… The caramel flavor might’ve gotten weaker. Even though I cleaned everything, I’ll strain it properly and remake the cream from scratch ( ; ; ) I made a fresh batch of cream— and it pipes SO much better 😂 I mean, not straining it? For people who bake seriously, that’s probably a big no-no, right? Looking good! It was a hassle, but I’m glad I redid it! Now for the final touches! And just like that, pumpkin pudding is done! 🥳 So cute! Heave-ho! And finally… this 😂 I tried drawing a pumpkin pattern on one earlier— What do you think about decorating them like this? I thought of a bunch of fixes, but couldn’t come up with anything better. So I’m piping the cream like usual— They’re super cracked 💦 I think piping the batter too thin this time was the main reason for the fail. What do you think? The feet tried their best to rise, seriously— They came out as much as they could! And that’s the end of the piping! Now I’m sticking Pocky sticks into them like this— Just like that… What do you think of this idea? Still looked a bit plain, so I added some icing decorations at the end! Ta-da! All done! I think I managed to recover a bit from that hopeless fail earlier… But still, if someone asked “Is this a pumpkin?” Hmm… not sure they’d say yes. And the decorations are kinda messy too (T ^ T) They kinda look like apples… Anyway, I made it to the end, so I’m calling it done! Good job, me! I think that’s a wrap? And just like that, all the pumpkin-themed sweets are complete! 🥳 They’re so cute 😍 The colors are so autumn-y and adorable 💖 First up— Ta-da! Pumpkin cookies! (This one’s the MVP!) The pumpkin seeds are cute, of course, but the ones with Pocky and sugar— they’re super cute too! And they’re super easy to make! Highly recommend! Next up is the pudding! The other sweets focused on pumpkin looks, but this one’s all about real pumpkin flavor. I wanted it to be genuinely tasty. I thought about making the pudding itself pumpkin-flavored, but this time I went with a caramel-pumpkin half-and-half style cream. And this one— The brown ribbon and mocha tones? They match so well! The pumpkin orange adds a nice accent, I think it looks great. It gives off a cozy, emotional vibe. Even if the writing and pumpkin drawings are messy lol And then this— The macarons. Not much to say about these ( ̄▽ ̄;) Anyway, I’ll share all of these with my friends later! Can’t show you the kitchen—it’s a total disaster, so time to clean up! See ya! The pumpkin flavor was a bit light though, so if I make them again, I might add some pumpkin cream inside the cookies. ○かぼちゃスポンジレシピ
ーーー材料ーーー
☆卵白1個+全卵2個
☆グラニュー糖 60g
★牛乳10g
★バター10g
薄力粉55g
かぼちゃパウダー15g
ーーー作り方ーーー
①型を準備しておく。
②★を同じお皿に入れてバターが溶けるまでレンジで温める。
③オーブンを170℃に余熱しておく
④☆を泡立て器で混ぜる。動画のような色になるまで十分に泡立てる(私は8分くらいやってるかな)
⑤薄力粉とかぼちゃパウダーをふるっていれる。(2回に分けるといいらしいけど私は1回でやってる笑)
⑥ヘラで切るようにまぜる
⑦温めておいた牛乳バターに少量の生地を入れ混ぜ合わせてから、⑤に加えてまぜあわせる。
⑧170℃のオーブンで23分加熱する。
⑨焼きあがったらすぐにクッキングシートを外して、粗熱が取れた後に冷蔵庫で冷やす。
○キャラメルクリーム
ーーー材料ーーー
グラニュー糖 80g
生クリーム 300g
※私は自分の好みで生クリームの半量をホイップにして作ってます
ーーー作り方ーーー
① 小鍋にグラニュー糖を入れ、中火で溶かしてカラメル色になるまで加熱する。
② カラメル色になったら火を止め、生クリーム100gを少しずつ加えながら混ぜる(はねることがあるので注意)。
③ 全体が滑らかになったら、粗熱が取れるまで冷ます。
④ 生クリームを別のボウルで8分立てくらいに泡立てる。
⑤ ③のキャラメルソースを少しずつ加えながら、ヘラで切るように混ぜ合わせる。
🌸喫茶店プリン🌸
○カラメル
グラニュー糖 90g
お湯 45g
① 小鍋にグラニュー糖を入れ、中火にかける。
② 砂糖が溶けて薄い茶色に変わるまで加熱する。
③ 火を止めて、お湯を少しずつ加える(はねるので注意)。
④ よく混ぜて滑らかになったら完成。
⑤ プリン型に流し入れて冷ます。
○プリン液
牛乳 350g
35%生クリーム 45g
バニラビーンズ 5g
全卵 4個
卵黄 5個
グラニュー糖 80g
① 牛乳と生クリーム、バニラビーンズを鍋に入れ、中火で温める。沸騰させないように注意。
② 別のボウルに全卵と卵黄、グラニュー糖を入れ、泡立てないように軽く混ぜる。
③ 温めた牛乳と生クリームを少しずつ卵液に加え、よく混ぜ合わせる。
④ 氷水でプリン液を冷やしたら、ブレンダーにかけ中の気泡を抜く。
⑤ 裏ごしして滑らかにする。
⑥ 型に流し入れ、アルミを被せたら半分の高さまで容器にお湯を注ぐ
⑦140度のオーブンで25分焼く
⑧粗熱が取れたら冷蔵庫で4時間以上冷やす
○かぼちゃクリーム
ーーー材料ーーー
かぼちゃ 100g
グラニュー糖 30g
生クリーム 50g
① かぼちゃを600Wのレンジで7分加熱する
② 皮を剥いてボウルに入れ、グラニュー糖と生クリームを加える
③ブレンダーで滑らかになるまで混ぜる
④ 裏漉しして、なめらかにしたら完成
裏漉ししようね😂
🌸かぼちゃクッキー🌸
ーーー材料ーーー
無塩バター100g
粉糖50g
アーモンドプードル50g
牛乳25g
薄力粉135g
かぼちゃパウダー35g
ーーー作り方ーーー
① 無塩バターを室温に戻して柔らかくしておく。
② ボウルにバターを入れ、粉糖を加えてなめらかになるまでよく混ぜる。
③ アーモンドプードルと牛乳を加えてさらに混ぜる。
④ 薄力粉とかぼちゃパウダーをふるい入れ、ゴムベラで切るように混ぜる。
⑤ 生地をラップに包み、冷蔵庫で1時間半ほど休ませる。
⑥生地分けて、一口サイズの大きさに丸める。ここでオーブンを150度に予熱しておくのがおすすめ。
⑦竹串で等間隔に8箇所線を入れ、上下に少し窪みを作る(ここは動画を参考にしてね)
⑧パンプキンシードを上部にさす
⑨150度に予熱したオーブンで15分焼く
⑩焼きあがったらケーキクーラーで冷まし、完成。
