Last Minute Small Batch Oat Flour Gingerbread Cookies GF

Hello Christmas! I’m leaving everything to the last minute this year (apparently).

I wanted to bake so many things, but in the end, I’m making Gingerbread Cookies, and Christmas cake (with some booze) and that’s it! 🙁

I’m not even decorating my Gingerbread cookies! But they are delicious even without the icing (I know because I already ate 10)

Anyway!

Ingredients:

– 1/2 Cup + 2 Tbsp Oat Flour (55g)
– 2 Tbsp Corn Starch (14g)
– 1 1/2 to 2 Tbsp Brown Sugar
– 1/8 Tsp Cinnamon
– 1/8 Tsp Ginger
– 1/8 Tsp Baking Soda
– 1 Tsp Cocoa Powder (optional, but it’s so worth it)
– 2 Tbsp Melted Bowned Butter
– 1/4 Tsp Vanilla
– 3/4 Tbsp Molasses
– 1 Egg Yolk
– Pinch of Salt

Bake at 350 ºF or 180 ºC for 7 to 8 min. It yields 12 2-inch cookies. Yes, I enjoy small cookies too.

– 1/2 Taza + 2 Cucharadas de Harina de Avena (55g)
– 2 Cucharadas de Almidón de Maíz (14g)
– 1 1/2 o 2 Cucharadas de Azúcar Morena
– 1/8 de Cucharadita de Canela
– 1/8 de Cucharadita de Jengibre
– 1/8 de Cucharadita de Bicarbonato
– 1 Cucharadita de Cacao en Polvo (opcional)
– 2 Cucharadas de Mantequilla Avellanada
– 1/4 Cucharadita de vainilla
– 3/4 de Cucharada de Melaza
– 1 Yema de huevo
– Pizca de sal

  1. I was not able to get the dough to be formable with just the ingredients listed. It may be my egg was to small or the brown sugar was too dry? Anyway sprinkled water in intill it was a formable dough and they have turned out amazing. So if its too dry dont give up, add a little moisture and check as they cook to make sure the water has baked out properly and you will be golden.
