Full Recipe:
Dough:
• 4 ½ cups all-purpose flour or 1.1 GF flour, plus ~½ cup for rolling
• 2 ¼ tsp instant yeast (1 packet)
• 2 eggs
• 1 ¼ cups warm milk (no hotter than 110ºF)
• 7 tbsp butter, melted
• ⅓ cup sugar
• ½ tsp ground cinnamon
• ¼ tsp ground allspice
• 1 tsp salt
• 2 tsp vanilla extract
• 2 cups apples, peeled + diced into ¼” pieces

Glaze:
• 2 cups powdered sugar
• 3 tbsp butter, melted
• 4–5 tbsp milk

Make the Dough:
1. In a stand mixer, combine warm milk, eggs, sugar, butter, and vanilla. Mix 1 min.
2. Add flour, yeast, salt, cinnamon, and allspice. Mix on low with dough hook, then medium 7–9 min. Dough should be sticky but holding together.

First Rise:
Cover bowl with plastic wrap + towel. Let rise 1–3 hours until doubled.

Shape the Doughnuts:
1. Cut parchment into 5” squares.
2. On floured surface, roll dough to ½” thickness.
3. Sprinkle on apples, fold in, roll into a log.
4. Slice into 14–18 pieces (2–3”), place each on a square.

Second Rise:
Cover and let rise 30–60 min, until puffy (about 50% larger).

Frying:
1. Heat 3” oil in deep skillet to 350ºF.
2. Fry 2 doughnuts at a time, 2–3 min per side, until deep golden.
3. Drain on paper towels then cooling rack.

Glazing:
Whisk powdered sugar, melted butter, and milk. Dip warm doughnuts in glaze and return to rack to set.
