練乳好きにはたまらない【Mr.Cheesecake公式レシピ】イタリアンプリン / [Mr.Cheesecake Recipe] Cheese Pudding (Flan) | Oyatsu Lab.

Hi it’s Oyatsu Lab. Welcome to our channel! Today we are making cheese pudding with Mr.Cheesecake official recipe! We post videos on a daily basis. If you are new, please subscribe to us! For the detailed recipe, please check out the description! Add sugar and water to a pan to make caramel sauce. Mix sugar and water well. Put on fire until it gets golden brown At first, the bubble is big and there is no color with the sauce. Don’t swing the pan By swinging sugar, it leads sugar to crystallization and makes difficult to get melted Leave the pan for a while until the color of the sauce is changing. Shake the pan when the sauce gets little bit of brown. Shaking the pan and let all the sauce to heat up. The bubble is getting smaller and the color is getting darker. Good smell of the sauce! Stop heating and add hot water Rolling the pan and mix the sauce and hot water well. When the sauce gets smooth, add it to the mold Spread the sauce into the bottom of the mold Enough when the sauce is spread all the bottom part of the mold. Let it cool down. Add cream cheese and sugar into a bowl to make pudding liquid. We are adding condensed milk into the liquid as well! Knead and mix cream cheese well until it gets smooth and creamy. You need to make the mixture creamy for sure at this step otherwise the batter gets lumpy. When it gets creamy mix well with a whisk. Enough when it gets the texture like this. Add an egg one by one. At first it looks difficult to get mixed The mixture gets gradually mixed and smooth Make sure not to leave any part unmixed. Add the second egg Adding and mixing the second egg, the mixture gets smooth When it is smooth enough like this, you can add all the rest of the eggs at one time. Mix well Don’t whip the mixture but just mix gently. Add milk into another bowl Add heavy cream and vanilla into the bowl and heat it up If you have milk and vanilla together and heat it up, you can add vanilla flavor to milk We are using vanilla paste this time! You can use vanilla oil instead Add vanilla paste to the mixture After warming up the mixute, add this mixuture into the pudding liquid. Adding warm mixture into the pudding liquid, It makes the batter warmer and can make the pudding faster. Microwave the milk to 50℃/ 122F Mix well. Be careful not to whip it. Mix gently. Have the cooking paper into a tray. It prevents from the mold moving when baking it. Pour the batter into the mold by filtering. By filtering, you can remove chalaza or cream cheese which has not be mixed well Filter the mixture for sure to make the texture of the pudding smooth and creamy. When filtering, the filter can get stuck easily. So mix well with using a spoon. Bake on hot water bath at 160℃ / 320F for 45-50 mins. By baking on hot water bath, you can make the surface smooth Add hot water to 80% depth of pudding If you worry about having the surface burnt You can cover with the top with aluminum foil while baking. Let it cool down and refrigerrate for 3 hours. Have a knife into the edge of the mold You can take out the pudding beautifully by doing this! Cut into the size whatever you like Well, I want to eat it at once It has such a melting texuture and creamy! It doesn’t taste that much of cheese It has rich taste of egg rather than cheese Also very milky and reminded me of my childhood.
