Easy Pumpkin Spice Biscotti Recipe

This easy pumpkin biscotti recipe is made in one bowl and is perfect for fall! With the spices of cinnamon, nutmeg, ginger, and cloves, this easy pumpkin biscotti recipe smells amazing as its baking and these pumpkin biscotti’s are perfect for dipping in coffee, hot chocolate, or tea on a crisp cold fall day. Feel free to add nuts to this easy pumpkin biscotti recipe to add an extra crunch to these delicious biscotti’s. These easy pumpkin biscotti’s were really good plain, but tasted even better with a pumpkin spice drizzle on top!

Ingredients
1/2 cup unsalted butter (melted & cooled)
1/2 cup pure pumpkin (do not use canned pumpkin pie)
1 cup granulated sugar
1 tsp vanilla extract
2 eggs (room temperature)
2 1/2 cups all-purpose flour
1 1/2 tsp baking powder
3/4 tsp salt
2 tsp pumpkin pie spice
1/2 tsp ground cloves (omit this if your pumpkin pie spice does not have ground cloves in it)

Pumpkin Spice Glaze
1/2 cup confectioners sugar
1 1/2 tbsp hot water
1/2 tsp pumpkin pie spice
1/8 tsp ground cloves
Add more or less confectioner sugar and hot water to get the consistency you desire.

Directions
1. In a large bowl of a hand or stand mixer, add melted butter, pumpkin puree, granulated sugar, and vanilla extract. Whisk these ingredients together until combined. Add room temperature eggs to the mixture, one at a time, and continue mixing.
2. Add all-purpose flour, baking powder, salt, pumpkin pie spice, and ground cloves to the wet ingredients and continue mixing for about 2 minutes. Once the ingredients are combined, chill the dough in the refrigerator for about 1 hour. Once the dough is chilled, place the dough on a cutting board or counter, and using wet hands, shape the dough into a round shape. This dough is really sticky, so add more water to your hands if needed.
3. Use a knife or bench scraper cut the dough in half. Move both halves to a baking sheet lined with parchment paper, making sure you leave enough room in between since they will spread out while baking. Shape the dough again with wet hands and try to make these the same shape and size. Using a small pastry brush, brush on some milk to the tops and sides of the dough.
4. Bake in a 350 °F degree preheated oven for around 25 – 30 minutes. Cool the loafs for 15 minutes and then cut into even slices. Place the slices on the baking sheet with one of the sides down and bake for 12 minutes.
5. Turn the slices over and bake for another 12 minutes. Both sides should be a nice golden brown. 6. Make the pumpkin spice glaze by adding confectioner’s sugar to a bowl and add hot water. Whisk together until it reaches the desired consistency. Add in the pumpkin pie spice and ground cloves and continue mixing.
7. Drizzle the pumpkin spice glaze over cooled biscotti with a piping bag or a plastic bag with a small cut in one of the edges. Store the biscotti in an airtight container for about two weeks.
