For me, 2025 was a year of great change.
Being able to share so many moments with all of you through this little window is my happiness right now.
I truly hope the coming year will be a wonderful one for each of you.

📝Recipe
🍅 Minestrone Soup | 2 servings
・Potato …… 1/2
・Carrot …… 1/3
・Onion …… 1/4
・Cabbage …… 1 leaf
・Minced garlic …… 1/2 tbsp
・Canned whole tomatoes …… 100g
・Water …… 450ml (2 1/4 cups)
・Consommé bouillon …… about 1 1/2 cubes
・Salt & pepper …… a pinch
・Olive oil …… 1/2 tbsp
・Chopped parsley …… as you like
How to make:
Cut all vegetables into small pieces.
Heat olive oil, sauté garlic and vegetables.
Add tomatoes, water, and bouillon, then simmer for 15–20 min until soft.
Adjust taste with salt & pepper and finish with parsley.

🥬 Rolled Cabbage (Ryuji-style) | 2–3 servings
・Cabbage leaves …… 4
・Ground beef & pork …… 260g
・Onion (minced) …… 60g
・Garlic (minced) …… 3 cloves
・Mayonnaise …… 1 tbsp
・Nutmeg …… a few shakes
・Bread crumbs …… 2 tbsp
・Olive oil or lard …… 2 tsp
・Butter …… 10g
・Water …… 200ml
・Consommé …… 1 tsp
・Salt & black pepper …… to taste
How to make:
Microwave cabbage leaves until soft, then trim the thick core.
Mix ground meat, minced onion, mayo, nutmeg, bread crumbs, salt & pepper.
Wrap the filling with cabbage leaves to form rolls.
Melt butter in a pan, add minced garlic, and place the rolls in.
Add water, consommé, a pinch of salt, cover and simmer about 20 min.
Finish with black pepper. Serve with mustard if you like.

  10. Hello Rein, I am curious about your exceptional culinary skills, particularly in Western cuisine. I've observed your knife sharpening technique, and it appears to me that it might not be the most effective method and could potentially damage the blade's edge over time. This is just my humble opinion.

    I'm also wondering if you are indeed located in Niigata, as your profile suggests. Is it truly a rural area of Japan, though I would like to explore that place in my future trips to Japan.
