Baked oats but different! Cooking the fruit for 15 minutes before makes them so juicy and helps to caramelise the banana. SAVE this for later and follow @alicelovesbreakfast for more like this.

INGREDIENTS 👩🏻‍🍳
➡️ 1 banana, sliced
➡️ handful strawberries
➡️ 2tbsp honey
➡️ cinnamon
➡️ 110g (~1 cup) jumbo oats
➡️ 1/2tbsp bicarbonate soda
➡️ 55g (~0.5 cup shredded coconut (you can sub this with nuts)
➡️ 250ml (1 cup) milk
➡️ 1 egg
➡️ vanilla extract
➡️ yoghurt to serve

Method
1. Preheat your oven at 180oc
2. Line a baking dish or tray with parchment paper
3. Line the dish with your sliced banana, strawberries, 2tbsp honey and a sprinkle of cinnamon
4. Bake in the oven for 15 minutes until golden
5. In the meantime, mix together your oats, sprinkle of cinnamon, bicarbonate of soda, and shredded coconut
6. Sprinkle over your fruits, and then top with your milk, egg and vanilla extract mixture
7. Place into the oven and then bake for 20-30 minutes until cooked
8. Leave to cool, slice and serve with yoghurt and extra strawberries
