wow it looks beautiful in the end, clean and even, and the method is a little different than usual but I guess it works, what does the extra egg yolk do to the sponge, if i reduce the ingredients for a smaller sponge do i still need the exrtra yolk, and what does heating the egg mixture do for the sponge?
