Sour Cream CHOCOLATE CAKE by Rockin Robin

This sour cream chocolate cake is moist and delicious. It has two layers of frosting, chocolate and white with chocolate chips in the middle.

This dessert will satisfy anyone with a sweet chocolate tooth!

Sour Cream Chocolate cake

Ingredients:
1 3/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup Crisco type shortening
1 1/2 cup sugar
1/2 tsp. vanilla extract
2 eggs
3 oz. unsweetened chocolate, melted and cooled
1/2 cup sour cream, full fat
1 cup cold water
1 box (3 oz.) instant chocolate pudding mix

Directions:
Preheat oven 350 degrees F.

Grease 2 round baking pans (either 8 1/2 or 9 inch round)

Stir together the flour, baking soda and salt in a separate bowl.

In a mixing bowl, beat shortening on low speed for 30 seconds. Then add sugar and vanilla and mix until well combined.

Add eggs, one at a time, mixing until each egg is blended in before adding the second egg.

Stir in the cooled chocolate and sour cream.

Add the dry ingredients starting with the pudding mix. Once incorporated, alternate adding the flour mixture and water just until combined.

Pour into baking pans and bake 30 to 35 minutes until a toothpick comes out clean when inserted in the middle of the cake.

Cool pans on a wire rack for 10 minutes before removing cake from the pans. Simply place a plate over the cake and invert. The cake should “fall into the plate.” Cool completely before frosting.

White Frosting

Ingredients:
3/4 cup shortening
1 1/2 tsp. vanilla extract
1/2 tsp. lemon extract
3 cups powdered sugar
1/2 cup semi sweet chocolate chips (optional)
3 to 4 Tbsp. milk

Directions:
Beat shortening for 20 seconds and then add the vanilla and lemon extracts and beat to incorporate.

Gradually add the powdered sugar and milk alternating, until combined. Adjust the amount of liquid until you get a consistency that is spreadable.

Spread the frosting on one layer of cake between 1/4 and 1/2 inch thick. Sprinkle chocolate chips on top.

Place the second cake layer on top.

Chocolate Butter cream Frosting

Ingredients:
1/2 cup butter, softened
4 cups powdered sugar
1/4 cup milk
1 1/2 tsp. vanilla extract
6 oz. unsweetened chocolate squares, 100% cocoa, melted and cooled

Directions:

Mix butter and vanilla until combined. Alternate the powdered sugar and milk until combined. Then add the cooled melted chocolate and mix in completely.

Frost the exterior of the cake and enjoy!

  2. OH WOW! Chocolate cake heaven!. Great recipe Robin. looks soo decadent! I can only get 70% chocolate here. Should I cut down on the sugar? Also, Hubby is upset with me when I showed  him about this recipe. His words , & I quote " You need to stop! Chocolate & cake in the same sentence! I can feel my belly grow without eating a thing" . Needless to say I will try & make this for him as treat this weekend :)Forgot to mention, Sidney, what a voice!

  4. Looks delicious!  I have a suggestion.  Add caramel coloring from King Arthur Flour to the chocolate frosting.  It makes it darker and more appetizing looking.
