Instant Pot – Banana Nut Bread

RECIPE:
3 ripe bananas
1 1/2 cups flour
1 tsp baking soda
1 pinch salt
1/2 cup Sugar
1/3 cup butter, melted
1 large egg, beaten
1/4 cup walnuts, chopped
1 tsp Vanilla Extract

Spray the pan that you will be using that fits in your POT.
In a medium bowl, mash bananas with a fork.
Add butter, sugar, egg and vanilla extract and mix. Stir until combined.
Add salt and baking soda to banana mixture and mix well.
Mix in flour 1/2 cup at a time. Add walnuts when you add the last 1/2 cup of flour.
Pour the banana bread mixture into your prepared pan or dish. Use a spatula to level the batter out.
Cover loaf pan with a paper towel and then cover with aluminum foil.
Add 1 cup water to your Instant Pot. Place the pan or pot that you are using on the trivet and lower into the pot.
Place and secure lid and make sure vent is set to “sealing”.
Hit DESSERT on LOW for 50 minutes or if using Instant Pot click Manual and 50 minutes LOW pressure. When timer ends, do a quick pressure release.
Carefully remove pan from the Pot and place on wire cooling rack for 5 minutes.
Remove bread from pan and continue to cool on wire rack.
Slice and enjoy!

  5. Making this right now. I used a 7in spring form pan. I forgot to add the chocolate chips so I sprinkled them on top. I hope it'll be fine. 🙂
