飯塚有紀子さんの『抹茶のサブレ』を作ってみました。
甘さは控えめでほろ苦く仕上がっています。

【抹茶のサブレ】ひとくちサイズで25〜30個分
1. ボウルにバターを入れ、泡立て器でクリーム状になるまですり混ぜる。
2. 1に準備したAを加えて 、泡立て器でよくすり混ぜる。
3. Bの粉類を合わせてふるい入れ、ゴムべらで粉気がなくなるまで混ぜる。
4. 3をラップに移してひとまとめにし、 直径2cmほどの棒状にまとめる。 冷蔵庫で1時間ほど休ませる。
5. 湿らせたペーパータオルで4の生地のまわりを軽く拭き、 ボードやバットに広げたアーモンドの上で転がして、アー モンドをまぶしつける。
6. 5を約1cm幅に、 25~30等分に輪切りにする。間隔をあけて天板に並べる。180℃のオーブンで12~15分焼く。
【食材一覧】ひとくちサイズで25〜30個分
バター50g
A （抹茶小さじ3、グラニュー糖 25g）
B（薄力粉 45g、アーモンドパウダー25g、コーンスターチ25g）
アーモンド20g
下準備
・バターは室温にもどしておく。
・アーモンドは刻む。
・Aの抹茶はふるいにかける。
・オーブンを180℃に予熱する。
[Matcha biscuits] 25 to 30 pieces in one bite size
1. Put butter in a bowl and mix with a whisk until creamy.
2. Add the prepared A to 1 and mix well with a whisk.
3. Combine the powders of B, sift them together, and mix them with a rubber spatula until the powders are gone.
4. Transfer 3 to a wrap and put them together in a rod shape with a diameter of about 2 cm. Let it rest in the refrigerator for about an hour.
5. Gently wipe around the dough in 4 with a damp paper towel, roll it on a board or vat spread on almonds, and sprinkle with almonds.
6. Cut 5 into 25 to 30 equal slices with a width of about 1 cm. Arrange them on the top plate at intervals. Bake in an oven at 356°F for 12 to 15 minutes.

Butter 50g
A (3 teaspoons of matcha, 25 g of granulated sugar)
B (cake flour 45g, almond powder 25g, cornstarch 25g)
Almond 20g
Preparation
・ Bring the butter to room temperature.
・ Chop almonds.
・ Matcha is sieving.
・ Preheat the oven to 356°F.
