I will make my favorite chocolate earl grey tart. 70g (2.5 oz) unsalted butter, room temperature Cream the butter until smooth. 50g (1.8 oz) powdered sugar Add it in 3 parts, mix well each time. Beat it with an electric mixer on low speed for 2 mins until whitish. It’s to make the tart crust crispy. 35g (1.2 oz, 2 Tbsp) beaten egg Add it in 3 parts, beat each time until smooth. Please use the egg reached room temperature to prevent separating. 20g (3 Tbsp) ground almonds Mix well until smooth while crushing lumps. 100g (3.5 oz) cake flour or all-purpose flour Sift it over the mixture. Fold it until many small, whitish, and dry lumps form, add earl grey. 4g (2 tsp) earl grey, powder-like Continue to fold until you don’t see almost flour left. It should form large clumps. Press and spread to prevent the dough from tearing. Gather it again, turn over the dough. Repeat it two more times. Wrap it with cling wrap and flatten it. Let it sit in a fridge overnight. Cut it into six equal pieces. Roll one to a round shape. Cover it with bread flour and roll it out 3mm / 0.1-inch thick. 10cm / 4 inches ring Place it gently over the tart pan. (8 cm / 3.1 inches tart pan) Press the side gently. Trim away any excess. Prick each base with a fork. Cool in a fridge for 30 minutes.
(Preheat an oven to 190℃ / 374 F.) Fill the inside with tart stones. Lower the oven to 170 ℃ / 338 F, and bake for 10-13 minutes until the edges are slightly brown. Remove the tart stones and bake for another 10 minutes. Bake until the bottom is baked through. Cool for 10 minutes, then turn each out from the pan. After cooling completely, brush melted white chocolate to the inside.
(30g, 1 oz white chocolate) A crispy texture will last longer. Cool in a fridge to set. 120g (4.2 oz) milk chocolate, couverture, finely chopped 55g (1.9 oz) whipping cream 6g (3 tsp) earl grey, powder-like 7g (1/2 Tbsp) unsalted butter, room temperature Add 2 Tbsp boiling water to earl grey, steep for 5 minutes. Put the steeped earl grey and whipping cream in a small pot. Heat it until just before boiling. Add it to the chocolate while straining with a tea strainer. Press the tea leaves and squeeze the cream out. Mix roughly, warm with a microwave at 600W for 20 seconds. (Use not dark chocolate but milk chocolate to prevent earl grey flavor from disappearing.) Add butter and mix well until smooth. Cool for about 5 minutes, and then put it in the tart crust. It’s to prevent the brushed white chocolate from melting. Cool for 1 hour to set. 60g (2.1 oz) white chocolate, finely chopped 60g (2.1 oz) whipping cream 0.5g (1/4 tsp) earl grey, powder-like Warm whipping cream and earl grey at 600W for 20 seconds. Once stir, warm another for 10 seconds. Add to the white chocolate, leave for 20 seconds, and stir. Warm it at 600W for 20 seconds to melt completely. Pour quickly without cooling. The surface will be clean. Cool in a fridge for 30 minutes to set. It’s all done! This is a rich chocolate tart made with earl grey in both the tart crust and ganache! ■ タルト台
無塩バター(常温)70g
粉糖 50g
溶き卵 35g(常温)
薄力粉 100g
アーモンドプードル 20g
アールグレイ紅茶 4g(2パック)
ホワイトチョコ(タルトに塗る用)約30g

■ ①紅茶のガナッシュ(ミルク)
ミルクチョコレート 120g
生クリーム 55g
無塩バター(常温)7g
アールグレイ紅茶 6g(3パック)
熱湯 大さじ2

■ ②紅茶のガナッシュ(ホワイト)
ホワイトチョコ 60g
生クリーム 60g
アールグレイ紅茶 0.5g(1/4パック)

■ 材料について補足
・紅茶は、ティーパック、もしくは粉末状に潰したものを使用
・①は、紅茶の風味を消さないようにするため、ダークではなくミルクチョコを使用
・紅茶の種類は、香りの飛びにくいアールグレイを使います
・ミルクチョコはクーベルチュール、ホワイトチョコは板チョコを使用しました。どちらも板チョコにしても大丈夫です

■ Earl Grey Tart Crust
70g (2.5 oz) unsalted butter, room temperature
50g (1.8 oz) powdered sugar

100g (3.5 oz) cake flour or all-purpose flour
20g (3 Tbsp) ground almonds
4g (2 tsp) earl grey, powder-like
30g (1 oz) white chocolate for brushing inside of the crust

■ ① Earl Grey Milk Chocolate Ganache
120g (4.2 oz) milk chocolate, couverture
55g (1.9 oz) whipping cream
7g (1/2 Tbsp) unsalted butter, room temperature
6g (3 tsp) earl grey, powder-like
2 Tbsp boiling water

■ ② Earl Grey White Chocolate Ganache
60g (2.1 oz) white chocolate, I used compound chocolate
60g (2.1 oz) whipping cream
0.5g (1/4 tsp) earl grey, powder-like

■ Notes
For ①, use not dark chocolate, but milk chocolate, so as not to lose the flavor of earl grey.
For the type of tea, use a fragrant earl grey.
