普段と一味違う美味しさが超簡単に作れる♪オクラのレシピ3品/普段のオクラ レシピに飽きたらコレ!/作り置き レシピ/easy okra recipe | GOROGORO KITCHEN/SUB
Hello everyone, it’s GOROGORO KITCHEN. Today, I would like to make 3 dishes that use okras, which are in season now. So, let’s get it started. First of all, let’s prepare okras for cooking. Cut off the edge of stem. Peel off the hard part around okra end. Sprinkle some kosher salt over okras and roll them so that you can eliminate fuzz and it also brings out the bright colour. Now the okras are ready to cook. First recipe is miso-yoghurt marinated okra. Add Greek yoghurt and Miso to the container. If you don’t have Greek yoghurt, then you can use plain yoghurt. Mix it well. Once it is well mixed, add okras. Marinate okras well in the yoghurt & Miso sauce. Let it rest overnight in the refrigerator. This one is after overnight margination. Wipe off the sauce. You can also wash them off if you like. Add some bonito flakes if you like. Second recipe is grilled okra & summer vegetables in a soy-based sauce. Any summer vegetables will do but I use bell peppers and aubergine for this time. Cut the bell pepper and aubergine into bite size pieces. If you are using European aubergine, cut some part of the skin as it is much harder than Japanese
one. Prepare clingfilm. Dip the aubergine in water and wrap them. Heat it up in the microwave until it is softened. Let’s grill okras and bell peppers. Put a frying-pan on high heat. Place okras in the pan without adding any oils. Grill them until the okras get partially brown colour. Grill bell peppers just like the okras. You can grill them together if you want to. Let’s prepare marinade sauce in a container. Add Dashi-soy sauce, water, sweet rice wine, vinegar, sesame oil, Yuzukosho. Mix all well. Add the vegetables in the sauce and mix all so that the vegetable can absorb the sauce. Let it sit in the refrigerator. You can eat it in 15 minutes but it can be stored overnight if you want. Something smells good…. It must be my snack! Third recipe is grilled okra with butter & cumin sauce. Grill okras without adding any oils, just like the recipe 2. Heat the butter up in a microwave. Add cumin powder and salt. Mix well. Place the okras in a dish and pour the cumin butter sauce over it. You can also serve the sauce as dipping sauce. Et voilà. Well, how was it? Let me try now. Everything is good! Firstly, about this miso-yoghurt marinated okra. I used to go to the French language school when I came to Paris. One day, I went for a picnic with some students in the class. I took this pickled okra as a snack and everyone loved it. I also serve this whenever we have gusts at home and it is always very popular. It is super easy to make, so I would like you to try it. I saw many recipes that tell you to boil okras but I think grilling okra is tastier. And okra is originally from Africa so it goes well with cumin. And for the grilled summer vegetable recipe, I grill okras and bell peppers but aubergine tends to get hard when you grill, so I recommend to steam it with microwave. Lastly, when I freeze okras, I just cut them without boiling, put them in a Ziploc bag and keep it in the freezer. You can add them directly into miso-soup and so on, it is really useful.
