Croffle with avocado, smoked salmon and poached egg | Panidor

Ouch we’ve already melted your 🧡 with this croffle with avocado, smoked salmon, poached egg and butter sauce.

To make this recipe at home you need:

🥐 80g plain croissant
🥑 Avocado
🐟 Smoked salmon
🍳 Eggs
Chives

Place the previously defrosted croissant in the waffle iron and let it brown about 2 minutes.

Add the sliced avocado on top of the croffle, along with the smoked salmon and poached egg

Add the sauce and chives

Run to the table before they steal your plate! 😜

🥣 To make the sauce:

– 4 egg yolks
– 5 tbsp of water
– 180g of butter
– Salt
– Pepper
– Lemon

Bring a pan of water to boil

Place the egg yolks and the 5 tablespoons of water in a bowl, in a bain marie, and stir slowly

Add the melted butter, stirring constantly

Add the salt and pepper to taste

Add the lemon juice and stir until the sauce is creamy
