    – Dried Plums, chopped 2 oz (60g)
    – Flaxseed 2 tbsp
    – Water 6 tbsp (90 ml)
    Soak for 10 minutes
    – Carrots (finely grated) 8 oz (230g)
    – Oat flakes 1 cup (90g)
    – Almonds 1/2 cup (60g)
    – Milk 1/3 cup (100 ml)
    – Baking powder 1 tsp
    – Cinnamon powder 1 tsp
    – **Salt** – A pinch
    – Agave syrup 2 tsp
    Spread batter on a parchment-lined baking sheet
    cut into 4 equal sections
    Layer with mascarpone-yogurt cream and stack
    Bake at 180°C for 25-30 minutes

    **For Cream:**
    – Mascarpone1 ¼ cups (300g)
    – Yogurt ¼ cup (70g)
    – Agave syrup 2 tsp
    – Topping Crushed walnuts (for garnish)
