APPLE AND MASCARPONE CAKE: soft and fragrant!
INGREDIENTS (for a 20cm cake pan)
4 eggs
200g (1 cup) of sugar
250g (1 cup) of mascarpone
220g (1 3/4 cups) of all-purpose flour
2 tsp of baking powder
4 apples
1 tsp of ground cinnamon
Granulated sugar
Powdered sugar
METHOD
1. Cut 2 apples into small pieces and 2 apples into slices using a cutting board and knife. Place them into 2 separate bowls filled with water and a few drops of lemon juice to prevent browning.
2. In a large bowl, combine the eggs and sugar.
3. Use an electric mixer to beat the ingredients for a few minutes until the mixture becomes thick and pale.
4. Add the mascarpone, and mix again until you get a smooth mixture.
5. Add the flour, baking powder, and ground cinnamon.
6. Mix again with the electric mixer until the mixture is lump-free.
7. Finally, add the chopped apples (drained).
8. Pour the mixture into the cake tin, which has been lined with parchment paper.
9. Arrange the apple slices in a circular pattern on top, then sprinkle with a handful of granulated sugar.
10. Bake at 180°C (350°F) for about 50 minutes.
