    Weekend again and it is time to share nutritious recipe to all of you.. I am craving for some donut and “KAMOTE CUE” for the past days.. If you don’t know what is KAMOTE CUE is popular “Meryenda” (mid afternoon snack) in the Philippines. Kamote Cue is refers to skewered deep fried sweet potatoes with a coating of caramelized brown sugar. Mostly be seen peddled around the busy streets. But I decided to be more creative and make it less sweets.. I came up to an idea of making a “Sweet Potato Donut but what excite me is because I will share 2 kinds of recipe .. YES!!! They are both super delicious and soft. You may eat them plain or with glaze.
    I made Vegan/ Plantbased potato doughnut that requires no baking. A sweet and legit alternative to conventional doughnuts. Sweet potato makes up the majority of the dough, so not only does that make it flavourful, it’s even healthier!

    First Type of Donut is with Tapioca Flour:
    Yield: 25-30 bite-sized balls
    Ingredients
    • 200 g sweet potato peeled
    • 2 Tbsp of sugar / coconut sugar
    • Scant ¼ tsp salt
    • 30 g tapioca starch
    • 15 g all-purpose flour
    • ¼ tsp baking powder
    • 1-2 Tbsp coconut milk
    • Frying oil

    1. Instructions

      1. Boil steam the sweet potato for 10-15 minutes until softened. Mash them evenly and add a pinch of salt. Leave aside to cool to room temperature. Do not boil them, we want to minimize the moisture of the sweet potato!

      2. Once mashed sweet potatoes have cooled to room temperature, add tapioca flour, sugar and salt then combine together. Then add the wheat flour with baking powder make sure that you sift the flour while adding it. Stir everything together. If it needs more liquid to mix add coconut milk, 1 Tbsp at a time, until all the flour can be incorporated. Make sure you stir in that 1 Tbsp of coconut milk well before adding the next.

      3. Start making dough. It shouldn’t stick in your hands but is also soft.

      4. Add enough oil into your pot to make sure it is deeper than the diameter of your balls because you want to make sure the balls can be completely submerged. Test the temperature of the oil by dipping a wooden chopstick into it. If bubbles appear around the chopstick, the oil is ready..

      5. Keep frying them, and eventually they will float, and once they float make sure you keep stirring them around so that they brown evenly. Let them fry for a full 5 mins, even if they colour has turned golden, in order to give them time to develop a crisp crust.

      6. Scoop them up, shake off excess oil, then place them on a paper-towel lined plate.

      Second Type of Sweet Potato Donut without Tapioca Flour

      Ingredients

      • 200 g sweet potato peeled

      • Scant ¼ tsp salt

      • 100 g all-purpose flour

      • ¼ tsp baking powder

      • 1–3 Tbsp coconut milk (depends on moistness of the sweet potato)

      • Frying oil

      Instructions

      Follow the same instructions written in Type 1 donut.

      I also made different glaze like dark chocolate, matcha & cinnamon For Matcha Glaze:

      For White Matcha Glazed:

      Melt 100g of white chocolate in a double boiler As soon as the chocolate almost completely melted removed from the bowl then add the 1/2 cup coconut cream continue stirring until well combined . Melt 1tbsp of matcha powder in 2 tbsp hot water stir then combine to half white chocolate glaze stir until well blended.

      For Dark Chocolate Glazed:

      Melt 100g of dark chocolate in a double boiler As soon as the chocolate almost completely melted removed from the bowl then add the 1/2 cup of coconut cream and 2 tbsp of vegan butter continue stirring until well combined add 2tbsp of butter.

      For Cinnamon: Combine 1/4 cup of sugar & 1/4 tsp cinnamon powder stir until well combined

      Dip the tops of the donuts into glaze or cinnamon sugar . Let cool for 20 minutes until the glaze is set, and enjoy preferably the same day.
