エレホン風簡単ローヴィーガンシナモンロール
Erewhon, the upscale grocery store in California, sells their raw, vegan cinnamon rolls for $9+ each. I don’t live in California, and I’m not paying that kind of money for one cinnamon roll. Instead, I’m making my own at home.
I happen to stock my pantry with all of the ingredients found in Erewhon’s delectable treats, so this was a quick and easy dessert to throw together.
And, while these are delicious as is, I am working on a small tweak to make them even better, so stay tuned!!

For the dough:
1/4 c psyllium husk
2/3 c water
2 c rolled oats
1/2 c pecans
1/4 c maple syrup
2 tsp vanilla
pinch of salt
For the filling:
10 pitted dates
1/2 c pecans
1/4 c water
3 tsp cinnamon
1 tsp vanilla
