New york cheesecake | baked cheesecake recipe

Ingredients:
For base:
Digestive biscuits – 260 grams
Caster sugar – ⅓ cup
Melted butter (unsalted) – ½ cup
For cheesecake filling:
Cream cheese – 560 grams
Caster sugar – ¾ cup
Salt – ¼ tsp
Vanilla essence – 1 tbsp
Lemon juice – 1 tbsp
Sour cream – 150 grams
All purpose flour – 3 tbsp
Eggs (room temperature) – 3
Icing sugar and berries to decorate (optional)
Tips:
• Ingredients should be room temperature.
• Mix at a low speed. Don’t overmix. Mix until just combined.
• Cheesecake is done when the sides are puffed up and the center is still jiggly. Cheesecake should be jiggly.
• Once it reaches that stage, turn off the oven and let it cool in the oven. Leave the oven door open slightly. This will prevent the cheesecake from cracking.
• Refrigerate overnight for best results.
