Banana Bread Overnight Oats

Such a delicious, healthy and high protein breakfast! Perfect for those who feel like they have no time in the morning!

Ingredients: Single serve
1/2 cup oats
1 tsp chia seeds
2 Tbs. TH Peanut Flour
2 Tbs. TH Optimized Plant Protein
Pinch Mineral Salt
1 1/2 Tbs. TH Gentle Sweet
1/4 tsp cinnamon
1/2 a banana
1/2 cup unsweetened almond milk
1/4 cup Greek yogurt (or unsweetened coconut yogurt)
Splash vanilla extract

1. Add all the dry ingredients to a jar and set aside.
2. Mash your banana in a bowl and add the rest of the wet ingredients. Mix well then pour onto your dry ingredients. Stir very well, put on a lid and place in the fridge overnight.
3. The next morning you can eat it straight from the jar, or you can get fancy and layer it in a bowl with some chopped bananas, a dollop of yogurt and a sprinkle of walnuts and cinnamon on top.
