150g Cake flour (diameter 20cm at the top, 3cm deep)
80g Butter
45g Sugar
1 Egg yolk
1tsp Vanilla oil
Pinch of salt
★ Tart Filling
3 Egg yolks (L)
90g Sugar
400cc Milk
40g Cake flour
1tsp Vanilla oil
200g Cream cheese
Juice of 1 lemon
★ Nuts Topping
70g Almonds
50g Hazelnuts
40g Water
100g Granulated sugar
40g Pumpkin seeds
★ Others – optional
Egg white for the tart crust
Cranberries rehydrated in rum
Icing sugar for the topping
