Appropriate amount of mushrooms of your choice. This time I used one large king oyster mushroom. Next, add 2 teaspoons of soy sauce. Adjust the amount of soy sauce between 1 and 2 teaspoons. For those who want to be completely gluten-free, I think it would be delicious to add 1 teaspoon of kombucha instead of soy sauce. You can also add 2 teaspoons of miso instead of soy sauce. Miso is harder to mix than soy sauce, so take your time. Bake in a 200 degree oven for 20 minutes. It is okay to place the dough directly on the cooking sheet without putting it in a heat-resistant container. When making dough ahead of time, put it in a heat-resistant container, put it in the refrigerator, and bake it in the oven just before eating. In this way, it is delicious to put the batter directly on the cooking sheet and bake it. If the dough is thick, it may take some time for the heat to reach the inside, so please spread it out to some extent. Okonomiyaki sauce can be easily made by hand by mixing seedless dates and apple cider vinegar. Commercially available vegan okonomiyaki sauce and baby okonomiyaki sauce are also delicious and convenient.
